Spicy Asian sesame guacamole

I love anything to do with avocados and this recipe, served with those lovely sesame rice crackers, is the perfect appetizer. Beware though, you will look like all your front teeth have fillings in them due to the black sesame seeds, so have toothpicks handy!

Serves 4

3 good-sized ripe Hass avocados
1/3 cup chopped red onion (fairly finely chopped)
1/4 cup thinly sliced scallions, white and light green parts. Reserve some for decoration
1 tbsp fresh lime juice
2 tsp chili-garlic sauce
1 1/2 tsp soy sauce or Coconut Aminos
1 tsp grated fresh ginger
1 1/2 tsp black sesame seeds
1/2 tsp toasted sesame oil
Coarse salt and freshly ground black pepper to taste
Sesame rice crackers, or celery sticks for serving.

Cut each avocado in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin and place the flesh in a bowl.
Add the chopped red onion, scallions, lime juice, chili-garlic sauce, soy sauce, ginger, 1 tsp of the sesame seeds and the sesame oil.
Mash with a fork until half smooth and half chunky.
Taste and add salt and pepper if desired. Sprinkle with the remaining 1/2 tsp sesame seeds and some chopped scallions and serve immediately with the rice crackers

Pickled herring, sour cream, apple and onion salad

This is a really super recipe from a neighbor in London many years ago. We used to adore it, and I only found it again recently.
Make sure you serve it very chilled.

Serves 4 to 6

1 cup sour cream
1/2 cup full fat plain yoghurt
pinch of sugar
1 tbsp lemon juice
2 medium onions, thinly sliced
2 tart apples, (Granny Smith) cut into thin slices
1 tbsp chopped fresh dill or 1 tsp dried dill weed
2 x 8 oz jars pickled herring, drained and cut into bite-sized pieces

Combine the sour cream, yoghurt, lemon juice, sugar, sliced onions that have been separated into rings, apple and dill.
Alternate the herring and sour cream mixture in layers in a dish.
Cover and refrigerate for 5 hours at least.
Serve very chilled.

Roasted cauliflower with truffled pea pesto and feta crema

I had this at “Etch” in Nashville recently and thought I had died and gone to heaven. It is a stunning appetizer with two fabulous dips and would be wonderful to serve for a dinner party as it’s so easy.

Serve 4 (or 2 if you adore it)

1 head of cauliflower cut into bite sized florets
1 tbsp olive oil plus more for garnish
Salt and pepper
Pea shoots or micro greens for garnish
A few salted almonds or Marcona almonds dropped onto the pea pesto
A few green olives and thinly sliced scallions for garnish

Pea pesto
2 cups fresh blanched peas or 2 cups frozen peas, thawed
2 tbsp butter
1 tbsp water
(Some people swear by adding 2 drops of liquid smoke, but it’s optional)
1 tbsp extra virgin olive oil
¼ cup grated Parmesan
½ tsp salt
1 pinch cayenne pepper
1 tbsp truffle oil
For the pea pesto
In a medium saucepan over medium heat, warm the peas with the butter and water until they are tender.
Add all the ingredients except the truffle oil to a blender, and mix slowly.
Gradually increase the speed until the mixture is creamy, adding truffle oil as you blend.
Add a few drops of water if the mixture is too thick.

Feta crema
4 oz cream cheese, softened
2 oz Greek feta cheese, crumbled
2 tbsp olive oil
1 tbsp fresh lemon juice
1/3 cup cauliflower, shaved with a box grater to snow-like consistency
Salt and pepper
For the Feta Crema
Stir the ingredients together until smooth

For the cauliflower
Preheat the oven to 375 to 400 degrees. In a medium mixing bowl, toss the cauliflower florets with 1 tbsp olive oil and salt and pepper to taste
Spread out the cauliflower on a baking sheet into an even single layer.
Roast until the edges are browned and the florets are easily pierced with a knife, between 15 and 20 minutes
To Serve
Place the roasted cauliflower florets in the center of a serving platter and drizzle with olive oil.
On one side of the florets mound the pea pesto and on the other side, mound the feta crema.
Garnish with the pea shoots or other seasonal micro greens, scallions, olives and almonds.

Simple, stunning salmon tartare

On a hot day with a glass of champagne or Rose what could be more wonderful than this?

Serves 4

8 oz fresh boneless wild salmon, diced
1 jalapeno pepper, seeded and minced
1 tbsp grated fresh ginger
1 tbsp chopped fresh cilantro
1 tbsp chopped fresh dill
1 tsp sesame oil
1 tbsp good quality mayonnaise (or Whole 30 compliant mayonnaise)

In a medium bowl, combine all the ingredients. Refrigerate until very cold before serving.

Dried apricot-cured salmon

This recipe comes from “The Girl and the Fig” cookbook and it really stood out as something worth doing.

Apricot-Cured Salmon
Yield depends on usage 

½ cup dried apricots
½ cup Pernod
¼ cup kosher salt
¼ cup sugar
1 teaspoon whole black peppercorns
2 fennel fronds
1 pound wild salmon, skin on

Place the apricots in a bowl with ½ cup hot water and the Pernod and rehydrate for 20 minutes. Purée the apricots in a food processor. Mix the purée with the salt, sugar, pepper, and fennel fronds.

Cut a piece of cheesecloth large enough to cover the salmon. Place the cheesecloth in a large baking dish and lay the salmon skin-side down on the cheesecloth. Cover the salmon evenly with the apricot-salt mixture and wrap it with the cheesecloth. Place another baking pan over the cheesecloth and weigh it down with at least 3 pounds of pressure (you can use water jugs, tomato cans, or even books). Refrigerate for 48 to 72 hours. Remove the weights and unwrap the salmon. Remove the excess salt mixture from the salmon and pat dry.

Slice very thin to serve.

Roasted dates with pancetta, almonds and chile

A gorgeous recipe from chef, Michael Symon. Simple, but so addictive.
Sliced almonds and red pepper flakes are added to sauteing pancetta and then spooned over roasted dates. The intensity of the flavors from the sweetness of the dates through the saltiness of the pancetta, the nuttiness of the almonds and the spicy heat from the chile is such a great combination on the tongue.

Serves 4 to 6

2 cups pitted dates
3 oz pancetta, finely diced (1/2 cup)
1/2 cup sliced almonds
1 tsp minced garlic
1 tsp crushed red pepper flakes
1 cup Chicken Stock
1 tbsp unsalted butter
1 tbsp fresh lemon juice
1 tbsp chopped fresh flat-leaf parsley leaves

 Preheat the oven to 350°F.

Put the dates on a small rimmed baking sheet and roast in the oven until heated through, about 5 minutes. Turn off the oven but leave the dates in there while you cook the pancetta.

In a medium sauté pan over medium heat, cook the pancetta until it is three-quarters crisp, about 5 minutes. Add the almonds and continue cooking until they brown, a few minutes. Add the garlic and cook for another minute or so. Add the red pepper flakes and stock and bring to a simmer, scraping the bottom of the pan with a wooden spoon. Remove the pan from the heat and whisk in the butter, stirring continuously until the butter is melted. Stir in the lemon juice and parsley.
Add the dates to the pan and swirl and toss them in the sauce. Divide the cooked dates among four to six plates and spoon the sauce over them.

Pan-fried eggplant with balsamic, basil and capers

Sweet, mild eggplant pairs with briny capers, floral basil, and a drizzle of balsamic reduction. Beautiful combination.

Serves 4
1/2 cup balsamic vinegar
1 cup olive oil
2 small eggplant (about 8 oz. each), trimmed and sliced 1/3″thick crosswise.
Kosher salt and freshly ground black pepper, to taste>
2 tbsp. capers
4 basil leaves, thinly sliced

Simmer the vinegar over medium heat in a 1-qt saucepan until reduced to a thick syrup, about 15 minutes.
Heat half the oil in a 12″ skillet over medium-high heat. Working in batches and adding more oil as needed, fry eggplant, flipping once, until golden-brown, 5–7 minutes.
Transfer to paper towels to drain and season with salt and pepper. Arrange on a platter; drizzle with balsamic.
Garnish with capers and basil.

Blue cheese potato chips

You will not be able to resist these from the “Food 52” website.

Serves 4 to 6

1 cup blue cheese, crumbled
1 cup heavy cream
1/2 cup milk
1 bag sturdy potato chips, like Kettel Chips or Cape Cod
Chives,chopped finely to sprinkle over as you are serving
Black pepper

Turn your oven on to Broil.
Heat cream, milk, and blue cheese in a saucepan over low heat until the blue cheese just dissolves.
Spread the potato chips out on a lipped sheet pan — line it with a sheet of parchment paper or a silpat to help with cleanup later.
Pour the cheese mixture over the potato chips, sprinkle with freshly ground black pepper and broil in the oven until the sauce is bubbly and bronzed in parts. Sprinkle with the chopped chives,
Serve alongside napkins

Roasted tomatoes with garlic, Gorgonzola and herbs

I absolutely love these, and they’re super to serve with drinks, as a starter or as a side to some grilled meat or poultry. Thank you to Giada de Laurentiis.

Serves 6

12 Roma tomatoes, sliced in 1/2 lengthwise
1/4 cup olive oil
2 big cloves garlic, minced
1/2 tsp Kosher salt
1/2 tsp freshly ground black pepper
3/4 cup plain breadcrumbs
3/4 cup finely crumbled Gorgonzola cheese, or grated Parmesan cheese
2 tbsp chopped fresh Italian parsley

Preheat the oven to 375 F

Using a teaspoon remove the seeds from the tomatoes.Place the tomato halves, cut side down, on paper towels to drain, about 5 minutes.

In a large bowl, mix together 2 tbsp of the olive oil, garlic, salt and pepper. Using clean hands, gently toss the drained tomato halves in the oil mixture until coated. Marinate the tomatoes for 10 minutes.

In a small bowl mix together the breadcrumbs and Gorgonzola (or Parmesan) cheese.

Place the marinated tomato halves cut side up on a parchment paper-lined baking sheet. Fill each tomato half with the breadcrumb filling. Drizzle with the remaining olive oil.
Bake for 20 to 25 minutes until slightly softened and the underside of the tomatoes are brown.

Arrange the tomatoes on a serving platter, sprinkle with chopped parsley and serve immediately.

Bubbling cheese, crab, spinach and artichoke dip

All my favorite things rolled into a hot, gooey dip, great for dunking bread, crackers or tortilla chips

1 tablespoon butter
2 cloves garlic, chopped
1/4 cup dry white wine
1 cup baby spinach,packed
4 ounces cream cheese, at room temperature
1/2 cup sour cream
chili sauce to taste
salt and pepper to taste
1/4 cup Parmigiano Reggiano,freshly grated
1/2 cup mozzarella, grated
1/2 cup good quality mature cheddar, freshly grated
1 cup artichoke hearts, chopped
1 cup crabmeat, chopped
3 green onions, chopped

Melt the butter in a pan over medium heat, add the garlic and saute until fragrant, about 30 seconds.
Add the white wine and spinach and heat until the spinach wilts, about 1-2 minutes.
Process the spinach, cream cheese, sour cream, chili sauce, salt and pepper in a food processor until nice and mixed.
Mix everything, place the mixture into a baking dish bake in a preheated 350F oven until bubbling and golden brown on top, about 20-30 minutes.
