Watermelon and feta salad with marinated olives and preserved lemon

1 small watermelon (1.6kg)

Kalamata olives:
50ml olive oil
1 medium red chili, thinly sliced into rounds
1 small garlic clove, skin on and lightly crushed
3 thyme sprigs
1 rosemary sprig
35g preserved lemons skin, julienned (the skin from about 2 small preserved lemons)
25 black Kalamata olives, pitted (100g)
coarse sea salt and black pepper

To serve:
100g feta, lightly crumbled into 1–2cm chunks
70g pickled watermelon rind, drained (optional; see introduction)
15g basil leaves
10g mint leaves

Place the olive oil for the olives in a small saucepan on a medium heat with the chili, garlic, thyme, rosemary and preserved lemon, along with ¼ teaspoon of salt and a grind of black pepper. Warm through gently for 4–5 minutes then remove from the heat. Set aside to cool, then pour over the olives. Set aside until ready to use: they can be used straight away but their flavor will intensify if you keep them marinating for 24 hours before serving.

Quarter the watermelon, cut out the red flesh and set the skin – with the white rind attached – aside. Cut each section of red flesh, width-ways, into 1cm thick slices, then cut each slice into smaller triangles, about 6cm long and 3cm wide. You will need 600g of flesh (discarding the seeds if you like) for the salad, so anything in excess of this can be set aside for snacking. When ready to serve, spread the fresh watermelon wedges out on a large platter or individual plates and sprinkle the feta on top, along with the pickled watermelon rind, if using. Spoon over the olives and their marinade, discarding the garlic, rosemary and most of the thyme. Finish with the basil and mint leaves, tearing them as you go, along with a couple of sprigs of the thyme and serve at once.

Tomato & watermelon gazpacho

Seves 6-8

2kg ripe tomatoes (about 20), peeled and roughly chopped (1.9kg net)
5 cloves garlic, peeled and roughly chopped
6 celery stalks, pale parts and leaves, all roughly chopped (450g net)
1 small onion, roughly chopped (140g net)
400g watermelon flesh, seeds removed
100g crustless white bread, broken into small chunks
150ml tomato passata (or tomato juice)
2 tbsp red wine vinegar
200ml olive oil, plus extra for drizzling
15g basil leaves
Coarse salt and black pepper

Croutons
150g crustless white bread, broken into 2-3cm chunks
3 tbsp olive oil
1½ tbsp red wine vinegar

First make the croutons. Preheat the oven to 180C. Place the bread in a medium bowl along with the oil, vinegar and 1 teaspoon of salt. Place a griddle pan on a high heat, add the croutons and cook for 2 minutes, turning until all sides are slightly charred and starting to crisp. Transfer from the pan onto a baking tray and place in the oven for about 12 minutes, until golden brown and crispy. Set aside to cool.

Place the tomatoes, garlic, celery, onion, watermelon, bread, passata and 10 grams of basil in a blender or large bowl along with 1½ teaspoon of salt and a good grind of black pepper. Blend until smooth and then, with the blender still going, add the vinegar and olive oil. Refrigerate until needed.

To serve, pour the soup into individual bowls and top with the croutons. Tear the remaining basil and sprinkle it on top of each portion, along with a final drizzle of oil. Finish with a little sea salt and serve at once.

Sesame and soy watermelon poke

Marinating and searing the watermelon concentrates it’s flavor and primes it for this savory treatment.
You will not miss tuna in this recipe, I swear it!

Serves 6

3 lbs seedless watermelon, rind removed, cut into 1-inch pieces
½ cup unseasoned rice vinegar
¼ cup toasted sesame oil
3 tbsp soy sauce
2 tbsp fresh lime juice
2 tbsp tahini
1 tbsp agave nectar
1 tbsp ume plum vinegar (optional but worth it and can be found in Asian markets or on Amazon)
Kosher salt
2 scallions, white and pale-green parts, thinly sliced
1 cup cilantro leaves with tender stems

Place the watermelon in a large resealable plastic bag. Purée the rice vinegar, oil, soy sauce, lime juice, tahini, agave nectar, and plum vinegar in a blender until smooth. Pour over the watermelon, seal bag, and chill at least 4 hours and up to 1 day.

Heat a large skillet over medium. Remove the watermelon from the marinade; set the marinade aside. Cook the watermelon, tossing often, until lightly caramelized and dried out, 6–8 minutes.

Meanwhile, bring the reserved marinade to a boil in a small saucepan. Reduce the heat; simmer until thickened to the consistency of heavy cream, 12–15 minutes.

Chill the watermelon and sauce separately at least 1 hour.

To serve, toss the watermelon with sauce; taste and season with salt as needed. Top with the scallions and cilantro.

Do Ahead

The watermelon and sauce can be made 12 hours ahead. Keep chilled.

Watermelon, feta and blackberry skewers

This is wonderfully simple and delicious with the sweet and salty combined and very pretty on the plate. From the food blog, “A healthy life for me”

Serves: 24

1 small seedless ripe watermelon, cut into 1″cubes
6 ounces of Greek Feta cheese, cut into 1” cubes
Fresh ripe firm blackberries
Small wooden skewers

Skewer watermelon chunks, feta and blackberry.
Place on serving platter and store in refrigerator until ready to serve. How easy it that!

Watermelon Tomato Salad with Cumin and Fennel

Another vegan, dairy-free beauty of a salad (from Food 52) for those hot summer days. If you like, you can add crumbles Greek feta cheese or even sliced Kalamata olives to have some variety, of course it would become vegetarian.

Serves 6

6 cups cubed (1/2-inch cubes) watermelon
2 heirloom or beefsteak tomatoes, cored and cut into 1/2-inch cubes
1 tsp sugar, optional
Salt
1/4 cup sliced mint
Juice of 1/2 lime
1 tsp cumin seeds
1/2 tsp fennel seeds
1 inch ginger, peeled and finely chopped
1/4 tsp turmeric
1/4 tsp chile powder
Juice of 1 lemon
Optional – Greek feta cheese, crumbled
Halved pitted Kalamata olives

Puree 2 cups of the watermelon in a blender and set aside. In a large bowl, combine the remaining watermelon and tomato and toss with the sugar, a large pinch of salt, the mint, and lime juice.

Set a large saute pan over medium heat and add enough oil to thinly coat the base of the pan. When the oil is hot, sprinkle in the cumin, fennel, and ginger, and toast for 30 seconds. Add the turmeric and chile powder, then 1/2 cup watermelon juice, and the lemon juice. Bring to a simmer. Add salt or sugar as desired, and cook for 1 minute.

Pour the sauce over the watermelon and tomatoes and gently fold together. Divide among 6 shallow bowls, and serve.

Watermelon Salad with Feta, Pine Nuts and Basil

Watermelon and feta may sound like a strange combination to you, but it’s eaten this way all over the Eastern Mediterranean – the salty-sweet combination works really well. It’s a very pretty salad too.
Combined with the crunchy pine nuts and fragrant basil, this has become one of my favorite ways to enjoy this beautiful melon, and it’s reliably delicious whether I’ve managed to pick a perfect one or not.


Serves: 4 

about 1/2 medium-sized watermelon, flesh cubed or cut into slices and seeds removed
8oz/200g good-quality feta, crumbled

1/3 cup pine nuts, toasted 

handful fresh basil leaves, torn into pieces
 (I have also used fresh mint which also works well)
a few spoonfuls of extra-virgin olive oil

freshly-ground black pepper 
Combine the watermelon, feta, pine nuts and basil leaves in a large bowl or platter. Drizzle with some extra-virgin olive oil and sprinkle with pepper. Eat immediately!!
