Thai ginger lettuce wraps

Thai ginger pork lettuce wraps

 

This is a really easy dish to make and can be such fun to serve with a big platter of sturdy small lettuce leaves and a big bowl of the spicy, gorgeous Thai ginger pork.
Stick it in the center of the table, whether for starters or a main course and everyone can help themselves. It certainly cuts out the formality of dining with guests. Very low carb and inexpensive to make too

Serves 3 – 4 but can be easily doubled.
3/4 lb ground pork (you can use dark meat turkey, if you don’t eat pork)
1 red bell pepper, finely diced
2 garlic cloves, minced
1 tbsp minced fresh ginger
1 tbsp Thai sweet chili sauce
1 tbsp Asian fish sauce
1 tsp Asian sesame oil
1 tbsp plus 1 tsp grapeseed oil, or canola oil
One 8 oz can whole water chestnuts, drained and diced
3 scallions, thinly sliced
2 tbsp oyster sauce
2 tbsp chopped fresh cilantro (coriander)
24  Boston Bibb lettuce leaves, baby romaine lettuce leaves or a small lettuce leaf strong enough to hold the meat filling.

In a medium bowl, combine the ground meat with the bell pepper, garlic, ginger, chili sauce, fish sauce, sesame oil and 1 tbsp of the grapeseed oil. Mix well.
In a large skillet or wok, heat the remaining 1 tsp oil until shimmering.
Add the ground meat mixture and stir fry over high heat, breaking up, until it is cooked through and starting to brown, about 10 minutes.
Stir in the water chestnuts, scallions, oyster sauce and cilantro and remove from the heat.
Spoon the ground meat mixture into bowls. Stack the lettuce leaves on plates.
To eat, spoon the meat onto the lettuce leaf, roll up and eat!

Middle Eastern Hummus

Middle Eastern Hummus

Everyone needs a good recipe for hummus and as soon as you make it, you’ll wonder why you spent so much money buying it!

1 cup of good quality chickpeas (soaked overnight in twice the water volume and a pinch of baking soda)
or, if time doesn’t allow to soak, use a good quality tin of cooked chickpeas
1 tbsp tahini (sesame paste)
2 tsp roasted cumin seeds (roast in a frying pan until fragrant)
1 clove garlic, crushed to a paste with a little salt
4 tbsp lemon juice
salt and pepper
About 6 fl oz of good olive oil
** You can also add some fresh chopped chili for more flavor

Place the soaked chickpeas in a large pot and fill with fresh water, cook for about 45 to 60 mins until they are tender. Strain and reserve the cooking liquid.
Place the chickpeas, cumin seeds, garlic, tahini, lemon juice and 2 tbsp of reserved cooking liquid in a food processor. Add about 3 fl oz of the olive oil and process, for a minute. Then add extra olive oil and cooking liquid to this mixture to get a smooth consistency.
Salt and pepper to taste

Cheesy, crispy baked cauliflower tots

These are an absolute winner as a starter or a snack and even children love them, not realizing they aren’t tater tots!
This recipe makes about 24 small tots and is modified from a recipe on “Kaylin’s Kitchen” a terrific food blog.

1/2 large head cauliflower, coarsely chopped
1/3 cup sharp cheddar cheese (preferably not the packaged pre grated stuff)
1/3 cup coarsely grated parmesan cheese (again, not pre grated, preferably)
2 tbsp almond or plain flour
1/3 tsp salt
1/2 tsp your favorite seasoning blend, like Spike or Montreal etc
Freshly ground black pepper
1 large egg, lightly beaten

Preheat the oven to 400 F
Spray a mini muffin tin with non stick spray
Cut away the leaves of the cauliflower, but use most of the inner core part for the recipe.
Coarsely chop the cauliflower, place in a microwave proof bowl, cover with cling film and microwave for 2 minutes on high so that the cauliflower is slightly soft.

Quickly take off the cling film and let the steam escape, and if you see any water in the bottom of the bowl, put the cauliflower into a colander to let the water drain off.
Put the steel blade in the food processor, add the cauliflower and pulse until the cauliflower is finely chopped but still slightly chunky. (Be careful you don’t end up with a puree!) Drain out any water from the bowl of the food processor.

Put the finely chopped cauliflower into a bowl and add the grated cheese, parmesan cheese, flour, salt, seasoning blend and ground pepper.
Stir until the ingredients are really well combined. Add the egg and stir until the ingredients are mostly coated with egg. Don’t be tempted to add any more egg!
Using a “one tablespoon scoop” or a steel one-tablespoon measuring spoon to scoop out rounded spoonfuls of the mixture and place in the min muffin tin.
Bake for 15 minutes then carefully turn each tot over in the muffin tin and bake for another 15 minutes or until the tots are nicely browned on both sides.
Serve these hot and straight from the oven while they’re still crispy

Avocado and lime mousse

Wondering what to do with all those avocados?
Here is a super, light and tangy recipe, great as a starter for a nice dinner.
Yields 4 servings
2 large ripe avocados
grated zest of 1 lime
2 tbsp fresh lime juice
3 1/2 oz low fat cream cheese, softened
salt and freshly ground black pepper
2 tsp unflavored gelatine powder
1 egg white (optional)
You will need nice glass dishes as the picture above or 4 x 4oz ramekin dishes
 Pit and peel the avocados and scoop the flesh into a blender or food processor.
Add the lime zest and juice and process until really smooth.
Add the cream cheese and blend until completely combined.
Season with salt and pepper and transfer to a bowl.
Sprinkle the powdered gelatine over 2 tbsp water in a small heatproof bowl. Let it stand until it starts to look spongy . Place the bowl in a skillet of barely boiling water so it comes about halfway up the sides and sir constantly until the gelatin dissolves.
 Drizzle the dissolved gelatin over the avocado mixture and stir well.
If using, beat the egg white until it forms soft peaks. Fold the egg white into the avocado mixture.
 Spoon into the dishes and cover with plastic wrap and refrigerate for 2 hours or so until chilled and set.
Serve chilled

Rosemary and white bean spread

I really adore this spread. It’s so easy to make and goes down very well with everyone.

This recipe is better if it sits overnight as the rosemary flavor strengthens quite a lot.
Serve this with pitta wedges, cucumber slices or toasted baguette slices.

2 x 19 oz cans cannellini beans, drained and rinsed
1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
2 tbsp fresh rosemary leaves
2 tsp salt
1 1/2 tsp freshly ground black pepper
1/3 cup fresh Italian parsley, chopped

In a food processor, combine the beans, oil, vinegar, rosemary, salt and pepper and process until smooth.
At this point, cover and refrigerate for at least 8 hours and up to 3 days to let the flavors develop. Bring to room temperature before serving.
When you are ready to serve, stir the dip, taste and season if necessary, drizzle with extra virgin olive oil and sprinkle with the parsley.

Tip.  What is also great is roasting whole garlic heads with the top 1/3 sliced off, olive oil poured over the garlic, fresh thyme, salt and pepper, then wrapped individually in foil then roasted at 300 F for at least 1 1/2 hours.
Squeeze some of this garlic into the food processor with the bean spread and puree.
It adds another dimension to the spread.

Chicken and rice noodle salad

From the wonderful Australian chef, Donna Hay. Simple, elegant, healthy and light.

Serves 2

6 oz rice noodles (the wide ones are nice)
2 x 7 oz cooked chicken breast fillets, sliced
2 long red chillies, deseeded and finely sliced
4 kaffir lime leaves, finely shredded
3 scallions, finely sliced
A handful of fresh cilantro leaves
A handful of fresh mint leaves
A handful of fresh basil leaves

Coconut milk dressing

1/2 cup coconut milk
1 tbsp fish sauce
2 tbsp fresh lime juice
1 tbsp caster sugar (superfine)

Place the rice noodles in a large bowl and cover with boiling water and stand for 4 to 6 minutes or until soft. Drain and rinse

Toss the noodles with the chicken, chili, lime leaf, onion, cilantro, mint and basil.

To make the coconut dressing, combine the coconut milk, fish sauce, juice and sugar.
Pur over the salad and serve

Grilled parmesan polenta with olives, peppers, pine nuts and rosemary

So many wonderful Mediterranean flavors and gluten free!

Serves 8 as starter or 6 as a main course

2 1/2 pints water
1 tsp salt
1/2 lb polenta (It’s recommended to use the instant variety, which cooks in 5 minutes)
3 tbsp butter
1/2 cup freshly grated parmesan cheese
3 red peppers
1 yellow pepper
extra virgin olive oil
2 cloves garlic, chopped
1 tbsp fresh rosemary, chopped
1/2 cup pitted and chopped kalamata olives
3 anchovy fillets, drained of oil and squished (optional, but I love them)
1/4 cup fresh pine nuts
sea salt

Bring the water to the boil in a large wide (not tall and narrow) saucepan.
Add the salt, then shake in the polenta from a height. Stir continuously, using a wooden spoon.
When the polenta is cooked (5 mins for instant polenta and about 20 mins for regular polenta), stir in the butter and parmesan cheese.
Tip it on to a shallow tray and spread out to 1/2 inch thick. Smooth the surface and leave to cool. The cooked polenta can be left at room temperature for several hours, or it can be made a day in advance, but should be kept covered and refrigerated.

Blacken the peppers over a hot gas flame until well charred, put them into a paper bag (I use a paper grocery bag) and clip it shut so the peppers can steam until cool. This makes it easy to remove the skins.
When cool, remove the skins, core and seeds, put them into a colander over a bowl to catch any precious juices, and cut into fine slices.

Heat 1 tbsp olive oil over a low heat in a small pan and add the garlic and rosemary. Cook gently until aromatic, but don’t let the garlic color.
Add the black olives and take off the heat, then stir in the peppers and any juices caught underneath the peppers.
If using anchovies, blend them into this mixture. This can all be prepared a few hours ahead; cover and keep it at room temperature.

Fry the pine nuts in a little oil until golden (make sure you keep moving them around in the pan or they will burn) and drain on a paper towel, sprinkling them with a little salt.

When ready to finish off the polenta, cut it into squares and brush it on both sides with olive oil.
Barbecue the pieces on both sides, or grill them on an indoor griddle until light brown and crispy.
Transfer the crispy pieces onto a serving platter, spoon on the pepper topping and add a smattering of toasted pine nuts.

Serve immediately with a good, interesting green salad.

Baked mozzarella balls wrapped in prosciutto with a herb tomato sauce

Crispy prosciutto balls encompassing melting mozzarella with a herb flavored tomato sauce.

Serves 4

4 balls (4oz each) buffalo mozzarella
ground pepper
8 thin slices Italian prosciutto
1 1/2 tbsp vegetable oil

Tomato Sauce
4 tbsp extra virgin olive oil
1 shallot, finely chopped
1 clove garlic, chopped
1 tbsp champagne vinegar
1/2 cup Passata (tomato puree)
6 plum (Roma) tomatoes, peeled and seeded
5 basil leaves
5 tarragon leaves
sea salt and ground pepper

To serve

a little chopped basil and tarragon
olive oil to drizzle

For the sauce heat 1 tbsp of the olive oil in a pan and sweat the shallot and garlic over low heat until soft.

Add the vinegar and cook for a further 3 – 4 minutes until reduced, then add the passata and tomatoes, and simmer for 3 minutes.

Add the herbs and remaining olive oil and cook over a very low heat for 10 – 15 minutes, stirring occasionally, until thick and a deep red.
Season with salt and pepper. Remove from the heat, allow to cool, then push through a coarse sieve and set aside.

Preheat an oven to 300 F. Season the mozzarella with pepper and roll up in the prosciutto allowing 2 slices per ball of cheese.

Heat the oil in a large frying pan over high heat until just smoking.
Place the parcels in the pan, and sear, turning constantly, until the outsides are well colored, about 1 minute.
Transfer the parcels to a baking dish and cook in the oven for 5 to 7 minutes.

Spoon the tomato sauce in the center of individual plates and sprinkle with the chopped basil and tarragon.
Set a mozzarella parcel on top, drizzle with olive oil and serve!

Sweet herring salad with apple and dill

This is so refreshing and tangy and a lovely way to start a meal.

Serves 4 to 6

1 cup sour cream
1/2 cup plain yoghurt
pinch of sugar
1 tbsp lemon juice
2 medium onions, thinly sliced
2 tart apples, like Granny Smith, cut into thin slices, or bite sized cubes
1 tbsp chopped fresh dill or 1 tsp dried dill weed
2 x 8oz jars pickled herring, drained and cut into bite sized pieces
chopped chives for garnish, if you fancy

Combine the sour cream, yoghurt, lemon juice, sugar, sliced onions that have been separated into rings, apple and dill.

Alternate herring and sour cream mixture in layers in a dish.

Cover and refrigerate for 5 hours or more.

Serve very cold

Griddled polenta cakes with caramelized onions, goat cheese and honey

This is a real winner, especially as a starter. Crispy polenta topped with sweet caramelized onions, slightly tangy goat cheese, then the drizzle of good honey.
You can caramelize the onions ahead of time so there’s very little left to do before you serve it. I always caramelize more onion than the recipe says as I love it.

Serves 6

Polenta
2 cups whole milk
1 tsp kosher salt
1 cup polenta
Extra virgin olive oil

Topping
1 medium yellow onion, halved and cut into 1/4 inch slices. ( I use 1 large onion at least)
kosher salt
2 oz goat cheese, crumbled  (I have been known to use 4 oz goat cheese, so buy more, just incase)
good honey to drizzle

In a medium saucepan over medium high heat, bring 2 cups water, the milk and the salt to a boil.
Slowly whisk in the polenta. Turn the heat down and continue to whisk for 5 minutes, or until the polenta is smooth and creamy. Spread the polenta into a 9” square baking dish and set aside to cool.

For the topping;
While the polenta is setting up, add the butter and olive oil to a heavy bottomed skillet set over medium low heat. Add the onion and a sprinkle of salt and cook, stirring occasionally, until soft, golden and caramelized, 25 to 30 minutes.

Pour 1 tbsp of olive oil into another skillet set over medium heat. Using a 3 inch round cookie cutter, cut out circles of the firm polenta and place in the hot skillet.
Cook until slightly browned and crusty on one side, about 2 to 3 minutes, then flip and cook the other side, another 3 minutes. Work in batches, adding more oil as needed.

To assemble the polenta cakes, arrange them on a plate, top with 1 tbsp (or more) of caramelized onions and about 1 tsp (or more) of crumbled goat cheese and drizzle with honey.
