Turkey tonnato

Given I’m not using beef or veal in recipes, I have replaced the usual veal tonnato with turkey and it’s brilliant! Thank you to Giada de Laurentiis for this recipe.

2 pound turkey breast, skinless and boneless (Or you can be really lazy and use precooked thickly sliced turkey, (1/2 ” slices) then miss the cooking stage of the turkey completely)
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon dried basil
2 tablespoons extra-virgin olive oil
1 cup chicken stock
Salt and freshly ground black pepper

Tuna Sauce:
6 ounces canned white meat tuna, packed in olive oil, do not drain. (Try not to use a tuna that contains soy.)
1 teaspoon anchovy paste or 1 anchovy fillet, drained
1 tablespoon fresh lemon juice
1 tablespoon capers, drained
1/3 cup Kraft Real, or Helmann’s Real mayonnaise. (Or a good quality Whole 30 version)
Chopped parsley leaves, capers or lemon slices, for garnish

Preheat oven 375 F.

Season the turkey with salt, pepper and herbs. Coat with olive oil, place in a baking pan and pour the chicken broth around the turkey. Place in the oven and bake for 30 to 40 minutes. Remove from oven and let cool in the baking pan for 10 minutes. Slice into 1/2-inch slices, on an angle. Allow to sit in baking pan with juices as you make sauce.

In the bowl of a food processor add the tuna, anchovy, lemon juice and capers. Puree until creamy, about 1 minute. Pour the tuna mixture into a bowl and stir in the mayonnaise.

Place the slices of turkey on a platter and pour the tuna sauce on top. Garnish with chopped parsley.

Asian fish parcels with coconut rice

This dish is so easy to make and a delight to the senses. The coconut rice really makes a difference and gives an exotic richness to the rice. It’s well worth growing your own Kaffir lime tree either in a pot or in the garden. They are very easy to grow and you have instant Indonesian/Thai flavors at your doorstep.

Serves 4

4 white fish fillets, 5 to 6 oz each, (haddock, halibut, sea bass or cod)
4 tbsp chopped fresh cilantro (coriander)
1 red chili, chopped
1 good sized shallot, thinly sliced
1 lime, sliced, plus extra lime halves to serve
2 lemongrass stalks, 1 roughly chopped and 1 bashed
10 1/2oz basmati rice
2 fresh or dried Kaffir lime leaves
2 fl oz  coconut milk or even better, coconut cream
salt to taste
dry roasted peanuts, chopped for garnish

Preheat the oven to 350 F
Cut 4 pieces of nonstick baking parchment into a 12 inch square
Put a fish fillet in the center of each piece and arrange some of the cilantro, chili, shallot, lime and chopped lemongrass evenly over each.
Wrap them up into neat parcels, transfer them to a baking sheet and bake for 20 minutes, max.
Put the rice in a lidded pan, cover with water and bring to the boil. Simmer with the lid on for 10 minutes or until the rice is soft.
When the rice is cooked and the water is absorbed, stir in the coconut milk.
Serve with the rice alongside the fish parcels with some extra lime halves. If you serve with the parcels open, then sprinkle the fish with some finely chopped dry roasted peanuts.

Caponata ratatouille

Mediterranean vegetarian food is the most comforting to eat and beautiful to look at. This is a combination of the Provencal ratatouille and Italian caponata with the briny capers and olives added for a punch. It is from the wonderful BBC Food website and is very low calorie. If you need anything else with it, you could boil some rice or pasta with it.

Serves 6

1 tbsp olive oil
1lb 10 oz eggplant, cut into 1 1/2″ chunks. If you don’t like eggplants you can use zucchini instead
1 large onion, cut into 1 1/2″ chunks
3 celery sticks, peeled and roughly chopped
2 large beefsteak tomatoes, skinned,deseeded and chopped into 1/2″ chunks
1 tsp chopped fresh thyme
1/4 to 1/2 tsp cayenne pepper
2 tbsp caper, drained
small handful pitted green olives
4 tbsp white wine vinegar
1 tbsp sugar, optional
1-2 tbsp cocoa powder, optional
Freshly ground black pepper
To garnish;
chopped toasted almonds
Chopped Italian parsley

Heat the oil in a non stick frying pan until very hot, add the eggplant and fry for about 15 minutes or until very soft. Add a little boiling water or stock to prevent sticking if necessary.
Meanwhile, place the onion and celery in a large saucepan with a little water or stock. Cook for 5 minutes or until tender but still firm.
Add the tomatoes, thyme, cayenne pepper, and eggplants to the saucepan. Cook for 15 minutes, stirring occasionally. Add the capers, olives, vinegar, sugar and cocoa powder and cook for 2 to 4 minutes.
Season with freshly ground pepper and add salt if you think you need it.
Divide between 6 bowls, garnish with the toasted almonds and chopped parsley and serve.

Slow roasted garlic and lemon chicken

There is nothing nicer than throwing everything into a roasting pan and watching it caramelize slowly, turning each ingredient into a mouthful of sweetness. The beauty of this dish is that the lemon turns sweet and incredibly tender and you can pop the chunks straight into your mouth, skin, pith and all! Thanks to the irrepressible Nigella Lawson.

Serves 4 but can easily be augmented

1 chicken (approx 4½lbs) cut into 10 pieces
A bulb of garlic separated into unpeeled cloves
2 unwaxed lemons (preferably thin-skinned) cut into chunky eighths
1 handful fresh thyme
3 tablespoons olive oil
2/3 cup white wine
black pepper

Preheat the oven to 325ºF.
Put the chicken pieces into a roasting tin and add the garlic cloves, lemon chunks and the thyme; just roughly pull the leaves off the stalks, leaving some intact for strewing over later. Add the oil and using your hands mix everything together, then spread the mixture out, making sure all the chicken pieces are skin side up.
Sprinkle over the white wine and grind on some pepper, then cover tightly with foil and put in the oven to cook, at flavor-intensifyingly low heat, for 2 hours.
Remove the foil from the roasting tin, and turn up the oven to 400ºF. Cook the uncovered chicken for another 30-45 minutes, by which time the skin on the meat will have turned golden brown and the lemons will have begun to scorch and caramelize at the edges.

I like to serve this as it is, straight from the roasting tin: so just strew over some thyme sprigs, warm some lovely bread and make a quick green salad and Bob’s your uncle!

Chicken with potatoes, prunes and pomegranate molasses

Again, here is another gem from Yotam Ottolenghi with a stunning mixture of flavors.
It is SO easy that you just throw everything into a bowl, mix well together then throw into a large baking/roasting dish. Bingo!

Serves 4 to 6

8 whole chicken legs (each with a drumstick and thigh attached, about 4 1/2 lbs in all)
16 medium fingerling or baby Yukon potatoes, peeled
3 large onions, peeled and quartered
5 oz pitted prunes
3 tbsp grated fresh ginger
1/2 cup soy sauce
6 tbsp pomegranate molasses
1 tbsp maple syrup
5 oz sweet mango chutney
1/2 tsp whole black peppercorns
1 1/2 tbsp oregano sprigs, plus a few picked for garnish

Heat the oven to 400 F
Mix all the ingredients in a large bowl, then tip it all into a large ovenproof roasting or baking dish.
Cover with a lid or thick foil and bake for 40 minutes.
Lower the heat to 350 F, remove the foil and cook for 1 1/2 more hours, stirring every now and then. If it starts to burn a bit, replace the foil or lid.

When the time is up, remove the dish from the oven, stir once more, cover and set aside for at least 15 minutes to rest and allow the flavors to mingle. Garnish with a few oregano leaves and serve with a sharp green salad and some good bread to mop up the lovely juices

Mushrooms with an Asian shitake cream sauce

This sauce is well worth adding to your repertoire. It is incredibly versatile being equally wonderful with pasta, rice, chicken, grilled meat and  seafood. No-one will be able to figure out why it tastes so gorgeous and exotic and you will wow your guests with it. Oh and it’s quick and easy!

Serves 4 as an entree

1 lb fresh shitake mushrooms
3 tbsp unsalted butter
2 tbsp chopped fresh chives
1/2 cup heavy cream
1/4 cup white vermouth or white wine
1 tbsp thin soy sauce
1 tsp dark sesame oil (toasted is great)
1/4 tsp grated orange zest
1/8 tsp Asian chile sauce
1 tbsp finely minced fresh ginger

To do in advance, (up to 8 hours) discard the stems from the fresh shitake mushrooms. Cut each cap into 4 wedges. Set aside the unsalted butter and chopped chives. In a bowl, combine all the remaining ingredients, then refrigerate until you’re ready to cook the dish.

Place a 12 inch saute pan over medium high heat. Add the butter and when it’s melted, add the mushrooms.
Saute the mushrooms until they absorb the butter, then add the cream sauce. Bring the sauce to the boil and boil the mushrooms, stirring until the sauce has thickened enough to lightly coat the back of a spoon. (about 4 minutes) Add the chives to the sauce, and serve with whatever you like.

Coq au vin

We had a really lovely coq au vin last night with close friends, sitting outside on the patio. It was one of those really simple recipes that is full of flavor and you can make ahead and put in the fridge overnight.
The depth of flavor to this dish is huge, especially as you caramelize the onions and mushrooms separately then add to the chicken them halfway through the cooking.
One time I served it with mashed cauliflower and a tomato, mozzarella, basil, avocado and red onion salad and it was divine. Another time I served it with mashed sweet potato and my “Easy cheesy zucchini bake” and it also went down a treat.

Serves 4 to 6
2 oz bacon fat or olive oil
4 – 5lbs chicken legs and thighs, seasoned well with salt and pepper
6 thick slices bacon, chopped
3 celery stalks, peeled and chopped
3 good sized leeks, chopped
4 cloves garlic, crushed
2 tbsp flour
20 fl oz good red wine (one you would drink)
4 to 6 sprigs fresh thyme
2 tsp herbes de Provence
2 bay leaves
salt and pepper
12 oz cremini or baby portabello mushrooms, sliced
A 14 oz bag of frozen pearl onions, defrosted then dried with paper towels.
3 oz butter

Preheat the oven to 325F
Heat the bacon fat or olive oil in a flameproof casserole dish with a lid, like Le Creuset. Add the seasoned chicken pieces and brown on all sides.
Transfer them to a plate. Add the bacon, celery, leeks and garlic to the casserole and fry until the bacon is crisp. Stir in the flour and cook gently until it becomes a paste. Gradually add the wine, herbs and salt and pepper, stirring. Bring to the boil.
Return the chicken to the casserole, cover and put into the preheated oven for 45 minutes.
Meanwhile, fry the onions and mushrooms in the butter for 5 to 10 minutes until nicely caramelized. After the 45 minutes are up, add them to the casserole, and stir well.
Re-cover and continue to cook for 1 hour or until the chicken is well cooked through.

Sticky marmalade chicken breast

We are marmalade addicts, so this is right up our street, especially on a busy day when there’s not much time to spare preparing dinner. Very low fat too.

4 boneless, skinless chicken breasts
1 tbsp olive oil
1/2 pint (8 fl oz) chicken stock
4 heaped tbsp fine (or coarse) cut marmalade
1 tsp fresh thyme leaves or 1/2 tsp dried thyme

Season the chicken breasts well with pepper and salt.
Fry the chicken in the oil for 8 to 10 mins turning once until golden on each side.
Add the chicken stock, marmalade and thyme and simmer for 5 to 10 mins.
Remove the chicken and boil the sauce hard to reduce to a syrupy sauce, then pour over the chicken and serve.

* Boiled rice is a lovely catch-all for the sauce too.

Chicken, sausage and whatever you have in the fridge traybake.

This is the most simple, stunning dish you can have in your repertoire. You can throw it together in minutes and let it roast and caramelize for about 45 minutes and your whole meal is on one roasting dish.

All you need is a very large bowl, at least 16” diameter (great to have anyway) and a large shallow baking tray, minimum 16” x 12” x 1”

The other day I was working and we only had 1 hour before needing to be downtown for a concert.
I took out my large bowl and started to throw stuff into it, tossed it all in olive oil and fresh herbs, some salt and pepper and spices and threw it all onto the baking tray, tossed it in the oven and 45 minutes later, we had a really stunning meal.

You can vary the meat and vegetables according to what you have in your imagination/fridge

Serves 4

Preheat the oven to 350 F

1 lb organic boneless, skinless chicken thigh, each cut into 3 chunks (Don’t use breast, as it gets too dry)
1lb of sausage you like, chorizo, Sweet Italian, Spicy Italian, cut into 1 inch pieces
2 large onions, red or white, cut into 1 inch chunks
As many cloves of garlic as you want, peeled, and half of them crushed and half of them left whole
A yellow, red and/or orange pepper, cut into 1 inch chunks
1 lb cherry tomatoes, some halved, the others left whole
3 zucchini, cut into 1 inch chunks
1 eggplant, cut into 1 inch chunks
8 oz baby crimini mushrooms,
8 oz Brussel sprouts, halved
1/2 butternut squash, or 2 cups in 1” cubes
Very small potatoes, or cut up ones, as they need to cook till tender

Throw all this into the large bowl and toss together with;

1 tsp paprika, sweet, hot or smoked, depending on your preference
2 good handfuls fresh basil, torn
A good amount of Kosher salt and freshly ground black pepper
2 tsp dried oregano, or any other herb you fancy
Some dried chile, if you like a kick
Liberally glug in some really good olive oil, at least 1/4 cup

Mix it all together well so everything is well coated and then tip everything out onto the large roasting tray. Shake till it’s evenly distributed, then put into the oven until it’s starting to get browned and beginning to singe at the edges.
Remove from the oven, taste and re-season.

* Some crumbled feta or blue cheese can also go over everything in the last 15 minutes of cooking

You will start playing around with the flavors and ingredients, trying different combinations, vegetarian, more meat, less vegetables….  The worlds your oyster on this dish!

Cauliflower steaks with ginger, turmeric, and cumin

I realize I have many cauliflower recipes, but it’s such an incredibly versatile vegetable. I keep finding more and more interesting recipes for this humble and inexpensive ingredient, each one so different.
This is adapted from another blogger’s recipe, but I have lost their name, so I’m hoping they will see this and remind me who they are!

Serves 3

1 large head of cauliflower
salt and pepper
2 tbsp olive oil, divided
1 tsp freshly grated ginger
1 tsp garlic, crushed
1 tsp ground cumin (I roast mine)
1/2 tsp ground turmeric
Small handful of cilantro, chopped

Preheat the oven to 400 F

Remove the leaves and trim the stem end of the cauliflower, leaving the core intact.
Using a large sharp knife, cut the cauliflower from top to base into three 3/4 inch thick “steaks”
Season each steak with salt and pepper on both sides. (Reserve loose florets for another use)

Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Sear the cauliflower steaks until golden brown, about 2 minutes on each side.
Gently transfer the steaks to a baking sheet.
Whisk together the remaining 1 tbsp of olive oil, ginger, garlic, cumin and turmeric.
Brush or spoon the mixture on the cauliflower steaks.
Roast in the oven until tender, about 15 – 20 minutes.
Garnish with cilantro and serve
