Pancetta and Gruyere cheese breakfast casserole

I have a weakness for these “cold weather” Sunday family breakfasts! They are so comforting and tasty especially with our fire on in the kitchen, steaming hot coffee, laptops and newspapers strewn around.
This is great because you can prepare it the night before, refrigerate and throw in the oven when you get up in the morning. The family will awaken to the smell of baking cheese and pancetta!!
It’s important to mark a weekend with something different!

Serves 4 to 6

4 cups day-old egg enriched bread, cut into 3/4 inch cubes
2 tbsp olive oil, divided
1 medium onion, thinly sliced
1/2 tsp salt
1/4 tsp sugar
1/2lb thickly sliced pancetta, diced
6 large eggs
1&1/2 cups whole milk
1/2 tsp dry mustard powder (I use Colmans)
1/4 tsp freshly grated nutmeg
2 tsp fresh thyme leaves
Salt and freshly ground black pepper
1 heaped cup freshly grated gruyere cheese (about 6 ounces)

Grease an 8 inch square baking dish and spread the cubed bread in the bottom.
Heat 1 tbsp olive oil in a skillet over medium to low heat.
Add the onions, salt and sugar.
Saute until they are lightly caramelized, a golden brown color, for about 15 to 20 minutes.
Meanwhile, in another heavy skillet, heat the other tbsp olive oil over medium heat saute the pancetta until the fat is almost all rendered and it begins to get crisp, about 8 to 10 minutes. Set on a paper towel to drain.

Whisk together the eggs, milk, dry mustard, thyme and nutmeg.
Season with about 1/4 tsp of the salt and a generous amount of black pepper.
Spread the pancetta over the bread cubes then layer the onions on top.
Sprinkle the grated gruyere cheese on next then pour the egg mixture over the entire thing.
Press down on the top gently so that all the bread cubes get soaked a bit with the egg mixture.
Cover and refrigerate overnight

In the morning, preheat the oven to 350 F and take the casserole out of the fridge while the oven is preheating.
Bake, uncovered for 30 to 50 minutes or until the edges are bubbling and the top begins to brown.

NB – The baking time will be greatly dependent on the depth of the dish you use.
Check the interior with a knife. if it comes out clean, the bread/custard is baked through.
Cover with foil near the end of cooking is the top is brown enough for your taste.

Provencal Golden Zucchini Galette

Serves 4 – 6

Tasting this transports you immediately to the South of France, sitting outside at a large table with many bottles of Rose, great bread, salads and the sun streaming down.
I have made this recipe so many times, often for house concerts and it’s just as good hot as it is room temperature.
It works incredibly well on a buffet table and the light curry flavor is very important as it gives that certain “Je ne c’est quoi”
I have also doubled, tripled and quadrupled this recipe for large gatherings and it’s still fabulous.

1lb zucchini
2 tsp fine sea salt
2 large eggs + 1 egg yolk
1/4 cup fresh breadcrumbs
3/4 cup freshly grated Parmigiano Reggiano cheese (Don’t cheat and use ready grated Parmesan)
1 tsp curry powder

Preheat the oven to 375F,
Using the coarse grating blade on a food processor, coarsely grate the zucchini.
Transfer the zucchini to a colander, sprinkle with 1 tsp of the salt and let sit to drain for 30 minutes.
Rinse the zucchini under cold running water, the put a good sized mound of it on an absorbent dish towel, gather it up and squeeze the heck out of it so there is lots of juice running out. Repeat until you’ve done all the zucchini and set it aside in a bowl.
This is an important stage as the galette will be too “runny” with juice it you don’t do this and it won’t set properly.

Place the eggs in a large bowl and beat lightly with a fork.
Add the breadcrumbs, cheese, curry powder and final tsp of salt.
Add the zucchini and stir to thoroughly coat the zucchini with the batter.
Place in a butter-greased baking dish and even out with the back of a spatula.
Place in the center of the oven and bake until golden and firm to the touch in the middle, about 30- 40 minutes.
At this point you can keep it warm in a warming drawer until ready to serve or it’s even nice at room temp.

Crab Quiche

Delicious and light.
Serves 6

2 cups shredded Swiss cheese (with 1/2 cup set aside)
1 cup crabmeat, chopped and picked over for any bits of shell
4 eggs
1 & 1/2 cups light cream
1/4 cup chopped onion
2 tbsp finely chopped fresh Italian parsley
3/4 tsp chopped fresh dill or 1/2 tsp dried dill weed
salt and pepper to taste
fresh crushed garlic to taste ( use 2 cloves)
A 9 inch deep frozen pie crust (defrosted)

Preheat the oven to 400F.
Place the cheese and crabmeat in the bottom of the pastry shell the set aside
Beat the remaining ingredients together thoroughly and pour into the pie shell over the crab. Sprinkle the top with the extra 1/2 cup of grated cheese.
Place on a baking sheet and cook on the lower shelf of the oven for 30 to 40 minutes until the filling is just set, puffy and golden.
Remove from the oven and place on a wire rack for 10 minutes before cutting into.

Note  You can also substitute shrimp that is cleaned, peeled, deveined and chopped up

Baked avocado with egg and “miso butter”

Serves 2

Ingredients

1 avocado
2 eggs
sherry vinegar
light miso
salt and pepper

Preheat the oven to 425 degrees.
Cut the avocado in half and remove the pit. In order to make more room for the egg and have a tbsp of the avocado flesh for the “miso butter” scoop out 1/2 tbsp of flesh from each half of the avocado.
Slice a little piece off the bottom of each half so they will sit flat on a small aluminum foil lined baking tray.
Season the flesh of the avocado halves and break an egg into each half.
Bake for 8 to 10 minutes for a soft boiled egg consistency or longer if you like a firmer egg.
Remove from the oven and drizzle some miso butter on the top.

Miso butter

1 tbsp light miso
1 tbsp avocado flesh
1/2 tsp sherry vinegar

Smash avocado until smooth. Add the miso and vinegar and mix until combined and smooth.

The garnish in the photograph is japanese pickled chillies, but you can just sprinkle some parsley or leave it as is.

Cauliflower cake

This is another Yotam Ottolenghi recipe. I would post the whole book (Plenty) if I could as all his recipes are divine and different.

Serves 4 to 6

This is lovely served as a light supper alongside a salad of sliced cucumber, dill, mint, a little sugar, cider vinegar and rapeseed oil.
Kept chilled the cake will taste even better the next day. I am constantly amazed at what one can do with the humble cauliflower. We eat it in so many different ways and I will eventually enter all the different recipes.
Again Ottolenghi’s recipes are in metric, so I have tried to convert them, but to be safe, have added the metric measurements too.

1 medium cauliflower (about 1 1/2 lbs)
1 large red onion, peeled
a couple of tbsp olive oil
1/2 to 1 tsp finely chopped fresh rosemary
10 large organic, free range eggs
1 tbsp  chopped fresh basil (20 grams)
1 1/2  cups plain flour (180 grams)
2 1/2 tsp baking powder
1/2 tsp ground turmeric
2 to 2 1/2 cups grated Parmesan cheese (220 grams)
Salt and black pepper
melted butter for greasing
2 tbsp black sesame seeds, black onion seeds or white sesame seeds

Heat the oven to 350F.
Break the cauliflower into medium florets, put them in a pot with 1 tsp salt, cover with water and simmer for 15 minutes or until very soft.
Strain and leave in the colander for 10 minutes to get rid of all the water.

While the cauliflower is cooking, prepare the batter.
Cut a few 1/4 inch rings off one end of the onion and set aside. These will go on top of the cake. Coarsely chop the rest of the onion.
Heat the oil in a pan and on a low heat saute the chopped onion and rosemary for about 8 minutes until soft. Remove from the heat and leave to cool down.
Add the eggs and basil and whisk.

Sift the flour, baking powder and turmeric into a large bowl and add the parmesan cheese, 1 1/2 tsp salt,
and plenty of ground black pepper.
Add the egg mix and whisk to eliminate any lumps. Add the cauliflower and stir gently, trying to keep some of the cauliflower florets whole.

Line the bottom of a loose bottomed 9 inch diameter with baking parchment then brush the sides of the tin with melted butter and sprinkle the sesame seeds onto the sides of the tin so they stick to the sides.
Tip in the cauliflower mix and arrange the sliced onions on the top.

Bake the cake in the center of the oven for 45 minutes until golden brown and set. Serve just warm or at room temperature.

Note   This would be lovely served with my other eggplant cake (also on my blog) as a lovely lunch or supper party served with a salad. Very inexpensive too!

Breakfast Strata

Another gorgeous and easy breakfast/brunch dish.

Serves 4 to 6 people

6 slices of a good dense Italian loaf cut 3/4 inch thick
1lb Sweet (or spicy) Italian sausage meat
1 tsp Dijon mustard (or less of English Colmans if you can take the heat)
1 heaped cup grated or shredded strong cheddar cheese. it’s always better if you buy it whole and mature then do it yourself
4 extra large (or large)  eggs, slightly beaten
1 1/2 cups whole milk
3/4 cup half and half
1/2 tsp salt
1/4 tsp ground pepper
dash of freshly grated nutmeg
1 tsp Worcester sauce

Trim the crusts from the bread and fit it all into the bottom of a  10 by 16 inch baking pan.
Brown the sausage meat, using a fork and press down forcing the lumps to disappear until it’s crumbly and drain off any excess fat. Stir the mustard into the sausage meat.
Spoon the cooked sausage meat evenly over the bread and sprinkle evenly with the grated cheese.
Combine the remaining ingredients in a bowl (eggs, milk, half and half, salt, pepper, nutmeg and Worcester sauce) then pour the mixture over the cheese and sausage mixture.
Bake at 350F for 25 to 30 minutes until hot, bubbly and set.
Note
 This can be made the day before and kept in the refrigerator. Allow extra time for bakiong if it’s been refrigerated

Coconut Cream Bread Pudding

Oh Lordy! I am a coconut fanatic and coupled with the comfort of bread pudding, you can’t get better than this!
Thank you to Paula Deen for daring to combine these two things.

Serves 6

Ingredients

Butter, for the dish
1 x 16 to 20 inch loaf of French bread, cut into cubes
4 extra large egg yolks
2 whole extra large eggs
2 (13 1/2 oz) cans unsweetened coconut milk
1 (13 1/2 oz) can cream of coconut (The sweetened one found near the Pino Colada section in the supermarket)
1/4 tsp salt
1/4 tsp freshly grated nutmeg
pinch mace
1 1/2 cups sweetened flaked coconut, plus 1/2 cup, toasted for garnish

For the chocolate velvet sauce
1 cup (6 oz) semi sweet chocolate chips
1/2 cup heavy cream
Make the chocolate sauce right before serving the pudding. Put the chocolate chips in a medium heatproof bowl. In a saucepan, bring the cream to a simmer over low heat, immediately remove it from the heat and pour it over the chocolate chips. Whisk until smooth.

Directions for pudding

Lightly butter the bottom and sides of a 9 inch square flameproof baking dish. Arrange the bread cubes evenly in the dish.
In a large bowl, whisk together the egg yolks, whole eggs, coconut milk, cream of coconut, salt, nutmeg and mace.
Stir in 1 cup of the coconut flakes. Pour the custard over the bread cubes, pressing down gently to soak up the custard. 
Let the mixture stand for 1 hour, covered, in the refrigerator.
Preheat the oven to 325 F
Sprinkle the top of the pudding with the remaining coconut flakes. Cover the whole dish with aluminum foil, poking a few holes in the top to release the steam.
Put the baking dish into a roasting pan on a wire rack. Pout hot water into the roasting pan to come halfway up the sides of the baking dish.
Bake until the pudding if firm to the touch, about 1 hour and 15 minutes.
Remore the foil and bake for 15 minutes more.
Remove the baking dish from the water bath and run it under the broiler, at least 4 inches from the heat, until golden, 1 to 2 minutes.
Let the pudding cool completely. Cover tightly with plastic wrap and refrigerate.

Pour the chocolate sauce over the individual pudding servings as desired. Top with the toasted coconut and serve
Note The chocolate sauce can be reheated in a saucepan over low heat. Add more cream, 1 tbsp at a time as needed to return it to the desired consistency.

Bacon, potato and egg breakfast casserole

Serves 6 as a main course

4 thick slices of bacon, cut into strips about 1/2 inch wide
1 large yellow onion, peeled and diced
1 yellow bell pepper, cleaned out and diced
4 cloves garlic, crushed
1/3 cup sun-dried tomatoes, chopped
2 tsp salt, divided
8 extra large eggs
1 large cup milk, preferably whole
1 tsp freshly ground pepper
2 cups shredded sharp cheddar cheese
3 cus frozen diced potatoes, unthawed

Heat the oven to 350F

Lightly grease a 13 by 9 inch baking with oil.

Put the bacon slices in a large skillet and turn the heat on to medium. Cook the bacon, stirring occasionally until crisp. Add the onion, yellow bell pepper, sun dried tomatoes and 1 tsp of salt and cook over medium heat  until all the vegetables are fragrant and soft- about 5 more minutes.
Turn off the heat and let cool slightly.

In a separate bowl beat the eggs thoroughly and whisk in the milk. Whisk in the remaining tsp of salt and the black pepper.
Stir in the cheese, frozen potatoes, bacon and vegetables from the skillet. (Don’t worry, the frozen potatoes cook just fine)

Pour the whole mixture into the prepared baking dish. At this point the casserole can be covered and refrigerated for 24 hours, this saving you oodles of time when entertaining for brunch!

When you are ready to bake the dish, bake for 40 minutes or until the eggs are firm and the top is sightly golden. A knife inserted in the center should come out clean.

Serve immediately with fruit, rolls or toast.

Note,

This recipe calls for frozen potatoes for convenience and it really works. It’s not worth the bother of pre- cooking potatoes.

Cheese-baked egg-stuffed tomatoes

This Iraqi-inspired recipe is the stuff of Sunday evening suppers – nourishing, full of the taste of years gone by, but with a hint of the exotic propelling you into the week ahead.

Serves 4

The eggs are settled onto bread for two reasons: it stops them falling over, and it also serves to absorb some of the tomato-y goodness. Dishes served this way are known as tashreeb (which kind of means “drinking bread”), and it is a great way to cook – the bread somehow feels quite sinful, oozing with vegetable “dripping”, and what may be a simple vegetable concoction is rendered something more substantial and filling. It’s also a good way to use up not-quite-freshly-baked bread.
8 big tomatoes
olive oil
2 onions, chopped
4 garlic cloves, minced (optional)
1 teaspoon marjoram
½ teaspoon turmeric
salt and pepper
1 sheet khobez (or 3 pitta)
8 eggs
100g / 3½oz grated cheese
1 teaspoon za’atar
Cut the tops from the tomatoes, and scoop out the flesh inside using a pointy teaspoon (or a melon-baller, if anyone has such a thing any more). Put the tomato shells to one side, and chop the inside bits, retaining as much of the juice as possible. Heat a little oil in a pan and cook off the onion; when it becomes translucent add the garlic, marjoram and turmeric. After a few minutes, add the chopped tomato.
Toast the bread and lay it in the bottom of a greased oven dish. Preheat the oven to 180C / 350F / Gas mark 4.
Spoon a little of the oniony mix into each of the tomato shells, and smear the rest across the bread. Nestle the tomatoes into the dish, and then crack an egg inside each one. Top with cheese and a sprinkling of za’atar.
Bake in the oven for 15 minutes, or until the eggs have set. Serve with additional warm bread.

The New York Times Chocolate Chip Cookies!!

I am posting this direct from another blog called Red Spoon, as they are so outrageously good.
Adapted to use milk chocolate instead of bittersweet, as it’s more gooey!
Makes 1 1/2 dozen 5 inch cookies
2 cups minus 2 tbsp (8 1/2 oz) cake flour
1 2/3 cups (8 1/2 oz) bread flour
1 1/4 tsp baking soda
1 1/2 tsp baking powder
1 1/2 tsp coarse salt
2 1/2 sticks (1 1/4 cups) unsalted butter
1 1/4 cups (10 oz) light brown sugar
1 cup plus 2 tbsp (8 oz) granulated sugar
2 large eggs
2 tsp natural vanilla extract
1 1/4 lbs milk chocolate disks or feves
sea salt
Sift flours, baking soda, baking powder and salt into a bowl. Set aside.
Using a mixer with a paddle attachment, cream butter and sugars together until very light, about 5 minutes.  Add eggs, one at a time, mixing well after each addition.
Stir in the vanilla extract. Reduce the speed to low, add the dry ingredients and mix until just combined, 5 to 10 seconds. Drop chocolate pieces in and fold them in without breaking them. Press plastic wrap against the dough and refrigerate for 24 to 36 hours. Dough may be used in batches and can be refrigerated for up to 72 hours.
When ready to bake, preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside.
Scoop 3x 1/2oz mounds of dough (the size of generous golf balls!) onto the baking sheet, making sure to turn horizontally any chocolate pieces that are poking up; it will make for a more attractive cookie.
Sprinkle lightly with sea salt and bake until golden brown but still soft, 18 to 20 minutes.
Transfer the baking sheet to a wire rack for 0 minutes then slip the cookies onto another rack to cool a bit more.
Repeat with remaining dough,  or reserve dough, refrigerated, for baking remaining batches the next day.
Eat warm with a big napkin and a very tall glass of milk
