Crab, mango, basil and cilantro noodle salad

This is a recipe from the wonderful British food magazine called “Delicious”. This is so easy to throw together and no cooking other than boiling a kettle!

Serves 4
8 oz ribbon rice noodles (Thai Taste is a good brand)
1 large very ripe mango
A large bunch fresh Thai basil or regular basil
A large bunch fresh cilantro (coriander)
4 oz fresh white crabmeat
4 tbsp salted peanuts
Dressing
2 tbsp fish sauce
1 tbsp rice vinegar
1/2 tsp granulated sugar
Juice 1 lime, plus wedges to serve

Bring a kettle of water to the boil. Put the noodles in a large bowl ans cover with plenty of freshly boiling water. Leave for 20 minutes, stirring now and then. Drain, then rinse under warm water to remove the starch. Drain and set aside in the bowl.
For the dressing, whisk all the ingredients in a small bowl. Slice the “cheeks” off the mango, score the flesh into slim wedges, then scoop them out, discarding the skins.
Chop the herbs, setting aside a few whole leaves. Toss the chopped herbs through the noodles with the mango, crabmeat and dressing, then divide among the plates. Chop the peanuts, then scatter over the noodles with the reserved herbs.

Serve with lime wedges and sliced chile if you like.

Val's Ballinkeele brown soda bread

At the beautiful manor house of Balinkeele, County Wexford, Ireland, where we stayed for a night on our two week driving trip of Ireland, we got to know the young owners of this stunning property, Laura, Val, and their four young children. They live in the house, run a bed and breakfast in it and do all the cooking and cleaning themselves. At breakfast we were served this delicious  bread warm from the oven. The recipe, which is easy to make, is Val’s handed down over the generations and it was to die for.

After breakfast we strolled around the property, taking as many pictures as possible of the gorgeous lakes, pathways and gardens.

Dry Ingredients
14 oz wholemeal flour
3 oz plain flour
4 tbsp mixed seeds & nuts, (like pumpkin, sunflower, pine nuts, golden flax seeds, chopped nuts, or whatever you fancy)
1 tsp baking soda
1 tsp salt

Wet ingredients
14.5 fl oz buttermilk
1 large egg
1 tbsp olive oil
2 tsp honey

Heat the oven to 450 F. Grease the inside of a 2lb loaf tin – cut a piece of baking parchment to fit the base.
Mix the dry ingredients together except for 2 tbsp of the nuts/seeds mixture, in a large bowl. In another bowl or a pitcher, mix the wet ingredients together, using a whisk, but don’t beat the mixture too much.
Make a well in the center of the dry ingredients, pour the wet ingredients in and mix well.
Turn the bread mixture into the loaf tin and pat down on the top with a fork or spatula. Scatter the remaining 2 tbsp seeds and nuts along the middle of the length of the loaf tin.
Cook at 450 F for 15 mins then turn down the oven to 375 F for the remaining 35 to 40 mins. Leave the loaf in the tin to cool a little and when cool enough to remove from the tin, it should sound hollow when tapped on the bottom.

Semolina, coconut and marmalade cake

This is such a simple, moist and flavorsome cake from the recipe book called “Jerusalem” by Yotam Ottolenghi. Semolina cakes soaked in syrup are all over the Middle East. They stay moist, with a light texture and are so easy. This cake keeps for 5 days if wrapped carefully to keep the air from it.

3/4 cup sunflower oil
1 cup freshly squeezed orange juice
1/2 cup orange marmalade (fine-cut or without peel)
4 large organic eggs
grated zest of 1 orange
1/3 cup superfine sugar (caster sugar)
3/4 cup shredded dried coconut
3/4 cup all-purpose flour
1 cup plus 1 1/2 tbsp semolina
2 tbsp ground almonds
2 tsp baking powder
Thick Greek yoghurt flavored with 1 or 2 drops of orange blossom water to serve

Soaking syrup
1 cup superfine sugar (caster sugar)
1/2 cup + 1 1/2 tbsp water
1 tbsp orange blossom water

Preheat the oven to 350 F
Whisk together the oil, orange juice, marmalade,eggs and orange zest until the marmalade dissolves.
In a separate bowl, mix together all the dry ingredients and add to the wet ingredients. Mix until really well combined.
The mixture should be runny.
Grease and line with baking parchment or waxed paper  2 x 1lb loaf tins (about 8 1/2″ by 4 1/2″)
Divide the filling evenly between them. Bake for 45 to 60 mins until a skewer inserted into them comes out clean and the top is an orangey brown.
Near the end of the baking time,place the syrup ingredients in a small saucepan and bring to the boil, then remove from the heat.
As soon as the cake comes out of the oven, start brushing them with the hot syrup with a pastry brush; you will need to do this in a few goes, allowing the syrup to sink down into the cakes before continuing. Use up all the syrup so it is absorbed into the cakes.
Once the cakes have cooled a little, remove them from the pans and leave them to cool completely.
Serve with the flavored yoghurt

Tomato, basil and toasted pine nut icecream

Another really interesting and delicious starter or dessert in a meal, especially in the hot summer months

Serves 4
1 &1/2 cups heavy cream
1 &1/2 cups whole milk
1/2 cup basil leaves
3/4 cup granulated sugar
1/4 cup Parmesan cheese, grated fine
3 egg yolks, blended
3/4 cup tomatoes, skinned, seeded and diced small
1/2 cup toasted pine nuts

In a large saucepan combine the cream, milk, basil, sugar and bring to a simmer on medium high heat. Retrieve the basil and stir in the cheese. Temper the yolks by adding a ladleful of the hot cream mixture to them, stirring it together until well combined and returning it to the pan.
Whisk until the cream mixture becomes thicker and coats a metal spoon then strain into large loaf pan. To expedite chilling, place a freezer pack in the loaf pan then refrigerate until thoroughly chilled, about 2-3 hours.
Process the cream mixture in an ice cream maker according to the manufacturer’s directions. When the ice cream is almost finished and still soft add the tomatoes and pine nuts. Serve immediately, as I love to, or transfer to a container and freeze until hard.

Note: To skin and seed tomatoes, bring a small pan of water to a boil, cut an ”x” on the stem end then drop into the pan. Wait thirty seconds until the skin starts to peel away at the “x” then drop into an ice bath for another 30 seconds. Seed the tomatoes by squeezing out the seeds and giving a quick rinse. Blot the tomato flesh dry before dicing.

Spiced mango and pistachio ice cream

You’re thinking, “She’s mad!” Well, she might be, but it’s worth it.I adore making ice cream and with my little Cuisinart 1.5 quart ice cream maker, this is so easy and so different! You’ll be hooked if you like curry. Let me know what you think.

Serves 8
1 cup dried mango, cut into small dice
3/4 cup boiling water
1 cup whole milk
3/4 cup sugar
1 tsp curry powder
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cardamon
1/8 tsp salt
1/8 tsp cayenne powder
1 cup heavy cream
1 tbsp dark rum
1/2 cup chopped pistachios, roasted and salted work great!

In a small mixing bowl, combine the dried mangoes and boiling water. Set aside to rehydrate for about 30 minutes, or until the mango pieces are soft and plump. Drain and set aside.
Meanwhile, in a small saucepan set over medium heat, combine the milk, sugar, curry, cinnamon, ginger, cardamon, salt and cayenne. Heat until wisps of steam start to rise from the surface of the milk, then remove from the heat and let stand to cool off and allow the flavors to blend.
Once the mangoes are rehydrated and the milk is cooled to room temperature, set up your ice cream maker as per the manufacturer’s instructions. Stir the cream and rum into the cooled, spiced milk then pour the mixture into the bowl of the ice cream maker.
Prepare as per the directions of your ice cream maker, adding the rehydrated mangoes and chopped pistachios once the mixture is almost completely frozen (it should be roughly the texture of a very thick milkshake)
Transfer the finished ice cream to a freezer-safe container and chill for 3 hours or more to allow the ice cream to harden to a scoopable texture

Eric Ripert’s summer chicken paillard with tomatoes, fennel and olives

In true Eric Ripert style (chef of the extraordinary restaurant in New York called “Le Bernadin”) this is a light and very flavorful summer dish with pure, refreshing flavors.

Serves 4
4 skinless boneless chicken breasts, butterflied and lightly pounded flat
1/2 cup shallots, minced
2 cloves garlic, minced
1 cup tomatoes, peeled, seeded and diced
1 cup thinly sliced fennel
1/2 cup green olives, pitted and sliced
1/3 cup raisins, soaked in white wine or water
1/3 cup pine nuts, toasted (or you can substitute almonds)
2 tablespoons capers
4 sprigs thyme, leaves removed
1/2 cup olive oil
3 tablespoons fresh basil, sliced julienne
2 tablespoons chopped parsley
fine sea salt and freshly ground pepper

Preheat oven to 400 F
Toss the tomatoes, fennel, green olives, shallots, pine nuts, raisins, caper, basil, thyme leaves, and garlic in a mixing bowl. Drizzle most of the olive oil over the vegetables and season to taste with salt and pepper.
Season the chicken breasts on both sides with salt and pepper. Place the chicken in a single layer on a large baking dish. Cover the chicken with the vegetable mixture and drizzle the remaining olive oil over and around the chicken.
Bake for 30 to 45 minutes, or until the chicken is cooked through. Sprinkle the parsley over the chicken and serve immediately.

Oil Packed-Tuna, Avocado, White Bean, Almond and Arugula Salad

This almost doesn’t need a recipe, but the combination is so delicious and healthy, I had to post it.

Serves 4 and makes about 1/3 cup dressing
2 tbsp freshly squeezed lemon juice
1 tbsp balsamic vinegar
1 tsp Dijon mustard
Kosher salt and freshly ground black pepper
honey
3 tbsp extra virgin olive oil
4 to 5 oz baby arugula
1/3 cup of lightly toasted slivered almonds
1 1/2 cups cooked cannellini beans (white kidney beans)  canned is fine.
1 1/2 cups cooked quinoa
6 oz olive oil-packed tuna (preferably line or poll caught)
4 oz crumbled Greek feta cheese
1 medium ripe avocado, pitted and diced small

Whisk together the lemon juice, balsamic, Dijon, a pinch of salt and a couple of twists of black pepper in a small bowl until well combined.
Add honey to taste and slowly whisk in the olive oil until well combined.
Taste and add more salt, pepper or honey if desired.
* The dressing can be made up to 4 days in advance and stored in the fridge.
Arrange the arugula in a salad bowl and top with the beans, quinoa, tuna, feta, almonds and avocado.
Drizzle with half the dressing and serve, passing the additional dressing on the side

Sticky chicken with sherry, almonds & dates

Tender, sticky roasted whole chicken legs coated in a lip-smacking glaze. Also ideal for feeding a crowd

Serves 8
3 tbsp olive oil
8 whole chicken legs (including the thigh)
2 large onions, chopped
15 garlic cloves, left whole in their skins
1 heaped tsp ground cumin (I roast mine)
8 fl oz (or 1 cup) sherry, like Manzanilla or Oloroso
zest and juice of 1 large lemon, plus extra zest to serve
3 oz whole blanched almonds, (I used Marcona) roughly chopped
12 large soft dates, like Medjool, pitted and chopped
2 oz pack flat -leaf parsley, roughly chopped

Heat the oven to 400 F
Heat 1 tbsp olive oil in a large frying pan.
Season the chicken then brown it on all sides.
Remove the chicken, place it in a large baking dish then set aside.
Add the remaining oil, onions and garlic to the pan and season.
Fry for 10 minutes until glden.
Stir in the cumin, sherry, lemon juice and zest. Bring to the boil then add the almonds, dates and half the parsley.
Pour the sauce over the chicken. Cover with foil, then roast for 1 hour until tender, taking the foil off after 15 minutes of cooking.
Spoon the liquid over the chicken a couple of times during the roasting.
Serve piled up on a large platter with the sauce poured over, the garlic cloves, remaining parsley and some extra lemon zest.
This is lovely served with a nice, tasty quinoa or couscous dish

One-bowl easy banana cake

 

This is the easiest one-bowl banana cake recipe. Use a flat rectangular baking tin for this, as it will cook  more evenly.

4 bananas
11 oz superfine sugar (caster sugar)
4 large eggs
8 fl oz sunflower oil
15 oz plain flour
2 tsp baking soda (bicarbonate of soda)
2 tsp cinnamon
1/2  tsp salt
5 oz walnut pieces
4 oz raisins

Preheat the oven to 350 F
Mash the bananas until they are smooth. A potato masher is good for this.
In a large bowl, put the mashed bananas, and add all the other ingredients, one by one, stirring with each addition. It doesn’t matter in what order you put them in, except I recommend putting the raisins and walnuts in at the end.
Lightly grease your baking tin and pour the cake mixture in.
Bake for 1 hour.

Pine-nut cookies

 

The perfect thing with a glass of wine. The ground fennel seed is divine in these cookies.

Makes about 24 to 36 cookies
1 stick (1/2 cup) unsalted butter, at room temperature
1/2 cup plus 2 tbsp sugar
1 1/2 tsps ground fennel seed
1 tsp good vanilla extract
1/4 tsp salt
1 large egg
1 1/4 cup all-purpose flour
1/4 cup pine nuts

Using an electric mixer, beat the butter, sugar, vanilla, fennel seed and salt in a large bowl until light and fluffy.
Beat in the egg.
Add the flour and mix just until blended
Transfer the dough to a sheet of plastic wrap. Shape the dough into a 8 inch long log. Wrap the dough in the plastic wrap and refrigerate for 2 hours.
Preheat the oven to 350 F.
Line a heavy, large baking tray with a silpat mat or parchment paper.
Cut the dough log crosswise into 1/8 to 1/4 inch thick slices.
Transfer the cookies to the prepared baking sheets, spacing evenly apart.
Press the pine nuts decoratively atop the cookies.
Bake until the cookies are golden around the edges, about 15 minutes.
