Quick and easy spicy prawn soup

We love our soups and even eat them through the summer months, sometimes replacing main courses with them, if they are substantial enough.
This is a recipe from the wonderful BBC Good Food website, and I altered it a little to suit our taste buds. It is very light and full of flavor.

 

Spicy prawn soup
Serves 4
 
1 tbsp sunflower oil
10 oz bag crunchy stir-fry vegetables
6 scallions, chopped on the diagonal, green and white parts
6 oz shitake mushrooms, stems removed and sliced
2 tbsp Thai green (or yellow) curry paste . You may want to start with 1 tbsp if you’re not too much into spicy food.
15 oz can reduced fat coconut milk
7 fl oz vegetable or fish stock
11 oz medium straight-to-wok noodles
8 oz bag large raw prawns, shelled and de-veined
A handful of roughly chopped cilantro

Heat a wok, add the oil then stir-fry the vegetables, scallions and mushrooms for 3 – 4 minutes.
Take them all out and set them aside, then tip the curry paste into the pan and fry gently for 1 minutes.
Pour in the coconut milk and stock. Bring to the boil, drop in the noodles and prawns, then reduce the heat and simmer for 4 to 5 minutes until the prawns are cooked through.
Stir in the vegetables, add the chopped cilantro and serve. Easy isn’t it?

Chilled spicy cucumber, avocado and coconut milk soup

Give me anything curried and I’ll walk miles for it!  I love this because there is no cooking and it tastes as if you’ve been slaving for hours in the kitchen. You can vary the garnishes.

Two 12-ounce cucumbers—peeled, seeded and chopped
2 Hass avocados, coarsely chopped ( try just one to start with as it may be too thick with 2)
2 teaspoons Thai green or yellow curry paste (Try less to start with and taste it)
2 teaspoons sugar, optional
2 teaspoons finely grated lime zest
One 13-ounce can unsweetened coconut milk
3 ½ cups chicken broth
3 tablespoons fresh lime juice (use lemon if you cannot find limes)
Salt
1/2 cup unsweetened coconut flakes, for garnish
10 cilantro sprigs, for garnish

In a food processor, puree the cucumbers until smooth. Add the avocados, curry paste, sugar, lime zest and chili.
Process until blended. Add 3 1/2 cups of chicken broth, the coconut milk and lime juice and process until smooth. Transfer the soup to a large bowl and season with salt. Cover and refrigerate until chilled, 15 minutes.
Meanwhile, in a skillet, toast the coconut over low heat, stirring a few times, until lightly browned and crisp, 3 minutes. Let cool.
Ladle the soup into small bowls or cups, garnish with the toasted coconut flakes and cilantro sprigs and serve.

Chilled essence of tomato consomme

On our vacation recently, we had an amuse-bouche course of this chilled soup and it was absolutely divine. The tomato flavor is intense, yet delicate and it’s well worth trying as a lovely summer starter. It’s hard to believe that the clear liquid is actually the tomato consomme.

5 ½ lbs cherry vine-ripened tomatoes, roughly chopped
1 stick celery, finely chopped
1 small shallot, finely chopped
half fennel bulb, finely chopped
1 small garlic clove, finely chopped
2 sprigs thyme, roughly chopped
4 leaves tarragon, roughly chopped
A handful basil leaves, roughly chopped
1 tbsp golden caster sugar
2 pinches cayenne pepper
5 drops Worcestershire sauce
3 drops Tabasco sauce

To serve
4 basil leaves, finely sliced, plus 4 small sprigs
6 large plum vine tomatoes, skinned, seeded and finely diced
good-quality extra-virgin olive oil

 In a large bowl mix all the ingredients together with 1 tbsp sea salt, cover with cling film and marinate for 6 hrs. Then, in a food processor, pulse the tomato mix in batches until roughly chopped – don’t over-chop them to a mush.
Place three layers of muslin cloth, or a new kitchen cloth, over a large bowl and pour the mix into the cloth. Tie up with string and hang in a cold place for at least 15 mins over the bowl to collect the tomato essence. Set aside the pulp. Taste and correct the seasoning, if necessary, then cool in the fridge.
To serve, spoon a quarter of the diced tomato into the centre of four bowls.
Carefully pour the chilled tomato essence around the tomato towers and garnish with the basil and a small drizzling of olive oil.

Spinach, leek and white bean soup

We are soup fanatics in our house, any time of the year. I made this soup recently because dear friends of ours were having their first baby at the hospital over the road from us, and ended up staying with us for several days before and after. New mom was very anaemic so I was trying to come up with high-iron meals. After some research I read that spinach and white beans are very high in iron.
Well, typical me, I can’t just make a small batch of soup, I made enough for 20 people, but they ended up taking the rest home. If you’re going to make a little soup, you might as well make a lot. That’s my mantra!
This one I made up out of whatever I had in the fridge and pantry and it ended up being really good, so I made it again today and wrote down what I was doing. There are some rather weird ingredients in it, but it all helps to layer the flavors.

2 tbsp butter and 4 tbsp olive oil
2 large onions, chopped
4 cloves garlic, crushed
1 x 4oz pack chopped pancetta (you could use 4 rashers  (slices) of bacon too)
6 leeks, cleaned and chopped
1 large potato, peeled and cubed small
2 x 15oz cans white kidney or cannelini beans, drained and rinsed
2 x 11oz packs (22 oz) fresh spinach
1  tbsp medium curry powder (If you want a real curried flavor, add 2 tbsp. 1 tbsp just gives it a certain “je ne c’est quoi”)
3/4 tbsp instant chicken Bouillon granules
3 x large (49oz) tins Chicken broth
A little salt and ground black pepper
8 oz cream cheese, at room temp

Get your largest saucepan, preferably a tall stockpot and put in the oil and butter. Heat gently and add the onions, garlic, pancetta, leeks and potato and saute, stirring occasionally.
Add the white beans and curry powder and season with a little salt and pepper.

2014-07-16 10.29.32Add the chicken broth and chicken stock granules and bring to a simmer. Add the spinach and keep pressing it down into the liquid with a wooden spoon until it wilts and shrinks considerably. Stir occasionally and simmer for 30 minutes uncovered.

After 30 mins, take the soup of the heat and set aside to cool for an hour or two. this way, when you blend it in the liquidizer, the steam won’t cause it to burst the lid off and cover you and your surroundings with soup!
When cooled a little, start blending it in a blender, add tablespoons of the cream cheese to each batch until you have used it all up. This gives it a really silky, creamy texture. When all is blended, return to the large pan and bring to  a simmer and serve
Serve. (You can cool the soup and freeze it in batches at this point)

Gorgeous Greek gazpacho with feta cheese

This is such a lovely, refreshing and vibrant dish on a hot summers day and so easy as there’s NO COOKING!!
I saw Ina Garten making this on the Food Network and immediately ran to the computer to get the recipe. It’s richer and more interesting than the usual slightly watery and one dimensional gazpachos one gets in many restaurants.
When we start our kitchen remodel in a couple of months, this will be a staple, along with several other great chilled soup recipes as we will be without the kitchen for 2 months.

 Serves 8 to 10
2 thick slices day-old bread, such as Ciabatta
6 large cloves garlic, chopped
2 tbsp freshly chopped oregano leaves
2 tbsp chopped Italian parsley
5 tbsp red wine vinegar
5 tbsp good olive oil
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
2 red onions, chopped
1 seedless cucumber, unpeeled, seeded and chopped
4 large ripe tomatoes, chopped
3/4 cup Kalamata olives, pitted and chopped
1 (46 oz) can good tomato juice, such as Sacramento
4 tsp Kosher salt
2 tsp freshly ground black pepper
8 oz good Greek feta cheese, small-diced, not crumbled

Place the bread, garlic, oregano and parsley in a food processor and process until everything is finely chopped.
Add the vinegar and olive oil and process again until smooth. Transfer the mixture to a large mixing bowl.
Place the peppers, red onion, cucumbers, tomatoes and olives separately in the food processor and process until very coarsely chopped. Add to the mixing bowl.
Add the tomato juice, salt and pepper and stir well. Taste for seasoning, cover with plastic wrap and refrigerate for at least 3 hours for the flavors to come together nicely.
Fold in the feta and serve chilled.

Chilled lemongrass and cilantro soup

Thanks to the wonderful and foolproof Delia Smith for this refreshing, zingy soup for those hot summer evenings.
Delicious before a dinner even in a soup shooter. it’s even nicer when the soup and the bowls or shooters are chilled when serving.

Serves 4
4 thick stems lemongrass
2oz fresh cilantro leaves
5 green onions, finely chopped
2 oz butter
2 medium onions
10 oz new potatoes, scraped and chopped small
5 fl oz whole milk
salt and freshly ground black pepper

Firstly, strip the cilantro leaves from the stalks and reserve both the leaves and the stalks.
Lemongrass is dealt in exactly the same way as leeks; trim the root and the tough top away, leaving 6 inches of stem, remove the outer skin and chop quite finely. Then do the same to the green onions.
Gather up all the trimmings from both, wash them and put them into a saucepan together with the cilantro stalks, some salt and 1 1/2 pints water and simmer, covered, for about 30 minutes to make a stock.
To make the soup, melt the butter in a large saucepan, then add the chopped lemongrass, onions (reserve the green onions until later) and potatoes and keeping the heat low, let the vegetables sweat gently, covered for about 10 minutes.
After that, pour in the stock through a strainer, discard the debris from the strainer and add the milk and about 3/4 of the cilantro leaves.
Season with salt and pepper, bring the soup up to a simmering point and simmer very gently for about 25 minutes.
Allow the soup to cool a little before pouring it into a food processor or blender, puree it, then pour it through a strainer into a bowl.
When it’s cold, cover and chill thoroughly until you’re ready to serve it.

Serve in chilled bowls or soup shooters.

You can add an ice cube to each bowl if you like and sprinkle in the rest of the finely chopped cilantro and the green onions as a garnish. FYI, in my picture there is no garnish other than a blob of whipped sour cream and a mini basil leaf which is also nice, but more minimalist.
Make sure you serve this soup chilled!

Chilled corn soup with prawns, avocado and tomato relish

Chilled corn soup with avocado, shrimp and tomato relish

This is the season for gorgeous chilled soups, whether you serve them in shooter glasses or bowls like this picture. I will be posting several of these over the next few summer months, as I love starting a meal with a refreshing and zingy flavor.  You can make them well in advance so they are ideal for dinner parties or spontaneous lunches. Recently we held a house concert here at our home and I made my chilled cucumber soup (also on this blog) and set out 40 shooter glasses and two large pitchers of the soup. There was a constant group hovering over the pitchers refilling their glasses.

Serves 4
1 tbsp coconut oil
2 large leeks, thinly sliced (white and light green parts only)
3 ears corn, husked, silk removed
3 cups chicken broth
1 avocado, pitted, peeled and diced
6 oz grape tomatoes, quartered lengthwise
8 to 10 leaves fresh, thinly-sliced basil
8 oz small or medium prawns, peeled and de-veined, tails removed
1/4 tsp sea salt
1/8 tsp Fresh ground black pepper
2 tbsp fresh lime juice

In a large saucepan on low, heat oil until melted. Add the leeks and cook, stirring occasionally, for about 8 minutes or until softened.
Meanwhile, over a large bowl, cut the corn kernels from the corn cobs (A sharp, serrated knife would work well). With a heavy knife, cut each cob into 2 to 3 pieces.
Add the corn kernels and pieces of cob to the pot with the leeks. Add the chicken broth and 1 cup of water, and increase the heat to high. Once boiling, reduce heat to low, cover and simmer for 25 minutes.
Remove the pot from heat and discard the cobs. Let cool for 10 to 15 minutes, then purée soup with an immersion blender. (Alternatively, carefully purée soup in batches in a food processor or blender.) Transfer to a large bowl, cover and chill for at least 4 hours, or overnight.
In a small bowl, toss avocado, tomatoes and basil
Heat a nonstick skillet on medium. Season the prawns with salt and pepper, add to the skillet and cook for 3-4 minutes, turning once, until just opaque.
Just before serving, chop the prawns coarsely and stir the lime juice into chilled soup. Ladle into bowls and garnish with avocado-tomato mixture and prawns, dividing evenly.

Asian spicy ground pork (or turkey) and green soup

So soothing, cleansing, light and tasty. Oh, and easy too!  I found this in an old Bon Appetite magazine and adapted it slightly.

Serves 2
1/2 lb ground pork (or turkey)
2 cloves garlic, finely chopped
2 tsp finely grated and peeled fresh ginger
1 tsp Sichuan peppercorns, crushed
3/4 tsp red pepper flakes
1/2 tsp cumin seeds, coarsely chopped (I roast mine for more flavor)
1 tbsp vegetable oil
Kosher salt and freshly ground black pepper
4 cups chicken broth
1 bunch mustard greens, or kale, beet greens or other greens, torn (about 4 cups)
4 to 6 scallions, thinly sliced
2 tbsp reduced-sodium soy sauce
1 tsp Thai fish sauce (such as nam pla or nuoc nam)
8 oz wide rice noodles

Mix the ground pork, ginger, Sichuan peppercorns, red pepper flakes and cumin in a medium bowl.
Heat the oil in a large pot over medium heat. Add the pork mixture, season with salt and pepper and cook, stirring and breaking up the meat with a fork, until browned and cooked through, 8 to 10 minutes.
Add the broth and bring to the boil; reduce the heat and simmer until the flavors meld, 8 to 10 minutes.
Add the torn greens, scallions, soy sauce and fish sauce and cook, stirring occasionally, until the greens are tender, 5 to 8 minutes.
Season with salt and pepper to taste.
Meanwhile, cook the rice noodles according to the package instructions. Drain and divide the noodles between the bowls and ladle the soup over

Tom Kha Gai. The world’s best soup!

This is one of my “desert island” foods. I am absolutely addicted to this soup and these flavors. The bright, clean taste of lime, ginger and cilantro and the exotic coconut milk and red curry paste is divine.
Red curry paste is available online on Amazon and this particular brand is the best and will keep in the fridge for months. They also have green and yellow pastes. I have all three on the go all the time.
If you don’t have the Keffir lime leaves, then use lime zest, but I highly recommend you go out and buy a Keffir lime tree and keep it in a pot. There is nothing like the flavor of those leaves.

1 tbsp coconut oil
2 tbsp grated fresh ginger
1 stalk lemon grass (pound the white ends to release the flavor)
2 tsp or more, of red curry paste
4 cups chicken broth
3 tbsp Thai fish sauce (Asian section in supermarket)
1 tbsp coconut or palm sugar. (optional)
3 (13.5 oz ) cans coconut milk
1lb chicken breast sliced thin
1/2 lb fresh shitake mushrooms, sliced
2 tbsp fresh lime juice
2 Keffir lime leaves, very finely chopped, or the zest of 1 lime
1/4 cup chopped fresh cilantro
salt, to taste

Heat the oil in a large pot over medium heat.
Saute the chicken pieces till done, add the ginger, lemongrass and curry paste and cook, stirring for 1 minute.
Stop,    inhale,    the aroma!
Slowly pour the chicken broth over the mixture, stirring cnstantly.
Stir in the fish sauce and coconut sugar and simmer for 15 minutes.
Stir in the coconut milk and mushrooms and cook and stir until the mushrooms are soft, abut 5 mins.
Stir in the lime juice, and zest or finely sliced (julienned) Keffir lime leaves.
Season with salt, garnish with cilantro.

Serve!

1/2 lb ground pork
2 cloves garlic, finely chopped
2 tsp finely grated fresh ginger
1 tsp Sichuan peppercorns, crushed
3/4 tsp crushed red pepper flakes
1/2 tsp cumin seeds, coarsely chopped
1 tbsp vegetable oil
kosher salt and freshly ground black pepper
4 cups chicken broth
1 bunch mustard greens, torn (about 4 cups)
4 scallions, thinly sliced
2 tbsp reduced sodium soy sauce
1 tsp fish sauce (such as nam pla or nuoc nam)
8 oz wide rice noodles
Also nice to try it with;
beet greens, kale or turnip greens
