Dreamy sweet onion bisque

I had this soup at the Capital Grill at the Hermitage Hotel in Nashville recently and thought it was the best soup I had ever tasted. (If you read the ingredients you can see why!)They gave me the recipe and I was blown away by how easy it was to make. You MUST allow the 5 hours for the onions to sweat as that is the secret of the velvety sweetness the soup has. The toasted brie sandwich segment dropped it, plus the bacon and chives take it to even headier heights!

4 to 8 servings.

10 large sweet Vidalia onions
1lb Plugra butter
1 qt heavy cream
Salt and white pepper, to taste
Smoked bacon, crumbled. Get really good quality bacon for this, chop it and saute until crispy
Freshly snipped chives
Brie grilled cheese sandwich

Peel and chop the onions into 1 inch chunks. In a large heavy bottomed saucepan, melt the butter until it becomes foamy and add the onions. Add about 1 tbsp of salt at this point and stir to combine all of the ingredients in the pot and continue to cook for 5 hours until they have completely softened and exuded the majority of their moisture.
Keep in mind that you really don’t want to get any color on the onions during this process so if you see it happening, lower the heat more.
After the 5 hours, add the cream and just heat it through gently.
When everything is hot and combined, you need to puree the soup in a good quality blender. If you want that really velvety texture, pass it through a fine mesh strainer or a mouli after blending it but this is an optional step.

Season with salt and pepper, pour into the bowls and garnish with some smoked bacon, chives and a triangle of Brie grilled cheese sandwich.

Roasted cauliflower with truffled pea pesto and feta crema

I had this at “Etch” in Nashville recently and thought I had died and gone to heaven. It is a stunning appetizer with two fabulous dips and would be wonderful to serve for a dinner party as it’s so easy.

Serve 4 (or 2 if you adore it)

1 head of cauliflower cut into bite sized florets
1 tbsp olive oil plus more for garnish
Salt and pepper
Pea shoots or micro greens for garnish
A few salted almonds or Marcona almonds dropped onto the pea pesto
A few green olives and thinly sliced scallions for garnish

Pea pesto
2 cups fresh blanched peas or 2 cups frozen peas, thawed
2 tbsp butter
1 tbsp water
(Some people swear by adding 2 drops of liquid smoke, but it’s optional)
1 tbsp extra virgin olive oil
¼ cup grated Parmesan
½ tsp salt
1 pinch cayenne pepper
1 tbsp truffle oil
For the pea pesto
In a medium saucepan over medium heat, warm the peas with the butter and water until they are tender.
Add all the ingredients except the truffle oil to a blender, and mix slowly.
Gradually increase the speed until the mixture is creamy, adding truffle oil as you blend.
Add a few drops of water if the mixture is too thick.

Feta crema
4 oz cream cheese, softened
2 oz Greek feta cheese, crumbled
2 tbsp olive oil
1 tbsp fresh lemon juice
1/3 cup cauliflower, shaved with a box grater to snow-like consistency
Salt and pepper
For the Feta Crema
Stir the ingredients together until smooth

For the cauliflower
Preheat the oven to 375 to 400 degrees. In a medium mixing bowl, toss the cauliflower florets with 1 tbsp olive oil and salt and pepper to taste
Spread out the cauliflower on a baking sheet into an even single layer.
Roast until the edges are browned and the florets are easily pierced with a knife, between 15 and 20 minutes
To Serve
Place the roasted cauliflower florets in the center of a serving platter and drizzle with olive oil.
On one side of the florets mound the pea pesto and on the other side, mound the feta crema.
Garnish with the pea shoots or other seasonal micro greens, scallions, olives and almonds.

Great cucumber and avocado salad

The wonderful food blog, “Smitten Kitchen” has come up with a version of a lovely and easy salad to have either as a main course or as a side to some grilled protein.
The salad is gluten-free, dairy-free and vegetarian and takes about 5 minutes to put together.
There are many ways to adapt it, too. You can add some thinly sliced Romaine hearts for bulk, but still leave it predominantly a cucumber and avocado bowl.
The scallions weren’t in the original recipe, so if they’re not your “thing” skip them.
If you’re not into lime, cilantro or parsley, try lemon and dill.
If you’re not into mayo, try using yogurt…

Serves 2 as a main or 4 as a side

3/4 to 1lb seedless cucumber, washed and chopped into chunks
2 thin or 1 regular scallions, thinly sliced
1 large avocado, pitted and diced
2 tbsp mayonnaise (or use or make your own Whole30 complaint mayonnaise)
Juice of half a lime, plus more to taste
Salt and hot sauce (we used Sriracha) to taste
Chopped cilantro or flat-leaf parsley to garnish

Combine the cucumber, scallions and avocado in a bowl.
Whisk together the mayonnaise, lime and seasonings, adjusting levels to taste.
Drizzle the salad with the dressing and garnish with cilantro or parsley.

Grilled corn with chiptole cream and cilantro

A super tasty recipe from Rachel Ray. and it’s sweet, smoky and spicy at the same time. This is perfect with some grilled meat or fish from the BBQ.

4-8 appetizer-sized portions

1 cup cream
1 chipotle in adobo sauce, seeded and finely chopped, 1 tsp adobo sauce reserved
Zest and juice of 1 lime, divided
1/2 heaped cup mild crumbling cheese such as queso fresco, Asadero or Cotija, for topping
1/2 tsp dried Mexican oregano
2 to 3 scallions, finely sliced
2 tsp fresh cilantro, finely chopped
4 ears corn, husks and silk removed

Pre-heat the grill to medium-high.

In a small saucepot over a low flame, heat and reduce the cream, chipotle pepper, adobo sauce and lime zest until thick and flavors come together, about 15 minutes. Reserve and keep warm.

While the cream is reducing, mix the crumbled cheese, oregano, scallion and cilantro together in a small bowl and set aside.

Grill the corn until the kernels begin to char evenly. When the corn comes off the grill, let cool slightly and cut the corn off the cobb. Place a spoonful of corn in a bowl, drizzle with the chipotle cream sauce, sprinkle with the cheese mixture and serve with a squeeze of lime

Orange-scented quinoa salad with pistachios and dates

Another beautiful healthy and tasty Summer salad. I can’t have enough of these and am always looking for more of these interesting recipes. We love eating them with a piece of marinated and barbequed fish or chicken.

Serves 4

6 oz (175 g) quinoa or red quinoa, rinsed
1 oz (30g) shelled pistachios
5 tbsp 70ml) fresh orange juice, plus finely grated zest 1 orange
4 tbsp (60ml) extra-virgin olive oil
2 tsp sherry vinegar
1 scant tsp Dijon mustard
6 green onions, very finely sliced
3 tbsp chopped fresh mint
3 tbsp chopped Italian parsley
1 large bunch watercress, tough stalks removed
10 ready-to-eat dates, chopped
Optional- goat cheese or Greek feta cheese to toss through or sprinkle over it

Bring 3 cups (500 mls) water (or 1/2 water and 1/2 broth of your choice) to the boil in a medium saucepan. Add the quinoa and reduce the heat to low, then cover and cook for 18-20 minutes until the water is absorbed. Remove from the heat, fluff with a fork and spread over a large plate to cool.

Meanwhile, in a dry frying pan, toast the pistachios until fragrant and starting to brown. Cool, then coarsely chop.

To make the dressing, whisk together the orange juice, olive oil, mustard and vinegar and season well.

To assemble the salad, put the quinoa in a serving bowl and toss with half the dressing. Fork through the orange zest, green onions, herbs, watercress, dates, chopped pistachios and enough of the remaining dressing to coat. Taste and add more salt, pepper and/or dressing if needed, then serve.

Lentil and Garbanzo Bean Salad with Feta and Tahini

Another lovely tasty and healthy meatless salad. Enjoy!

Lentils

Scant 1 cup dried green lentils (Puy or Casteluccio, if you can find them) picked and rinsed over. (or buy the vacuum packed cooked lentils in the supermarket and skip this whole cooking stage)
2 large garlic cloves, halved lengthwise
2 fresh sage sprigs
2 tbsp olive oil

For the dressing and salad
2 tsp coriander seeds, toasted and ground
1 tsp cumin seeds, toasted and ground
1/2 large garlic clove
Salt (Maldon or another flaky sea salt if you’ve got it)
2 tbsp well-stirred tahini paste
1/4 cup freshly squeezed lemon juice, plus more to taste
2 tbsp plus 2 teaspoons olive oil

1 and 3/4 cups drained garbanzo beans (chickpeas,from a 15-ounce can)
1/2 small preserved lemon, pith and flesh discarded, rind finely diced (optional)
1 small red onion, thinly sliced into half-moons
A handful of cilantro or flat-leaf parsley sprigs
1/4 cup Greek feta cheese
1 1/2 tbsp raw sesame seeds, toasted in a dry pan until a shade or two darker

Make the lentils: Put the lentils, garlic, sage, and olive oil in a small pot, along with 2 cups cold water, and set it over medium heat. Let the water come to a simmer (not boiling), then turn the heat to low and cook the lentils in a very gentle simmer just until they are tender (about 25 to 30 mins and you might need some extra liquid near the end) Take the pan off the heat and let the lentils cool a bit before draining them. Pick out and discard the sage and garlic. You’ll have about 2 cups cooked lentils.

Make the dressing: Mix together the ground coriander and cumin in a small bowl. Mash the garlic clove to a paste with 1 tsp salt (use half as much Kosher salt, even less table salt) on a cutting board or in a mortar. In a small bowl for your dressing, combined the mashed garlic, tahini, 3 tablespoons of the lemon juice, 2 tbsp of the olive oil, 1 tsp of the ground coriander-and-cumin mixture and 2 tbsp water. Stir well, then taste. Add more lemon if desired.

Assemble the salad: Place onion slices in a medium bowl and break them up with your fingers. Sprinkle in two good pinches of salt, then two teaspoons of lemon juice, two remaining teaspoons of olive oil and the cilantro or parsley. Toss well, then crumble in the cheese and gently toss again.

Toss the lentils with the drained chickpeas, preserved lemon rind (if using), and 1 teaspoon flaky sea salt (use half as much Kosher salt, even less table salt) in a large mixing bowl. Pour in the tahini dressing and toss it all together really well, then stir in the onion-feta mixture.

Arrange the salad in bowl or platter. Sprinkle the mixture with the sesame seeds and some of the remaining spices. Serve

Roasted tomatoes with goat cheese polenta and garlic spinach

This recipe is from the blog “Pinch of Yum” and is absolutely delicious. We are trying to eat less meat and you wouldn’t miss it with this.

Serves: 4

3 cups cherry tomatoes (or small tomatoes – tricolor or heirloom are super pretty!)
3 tablespoons olive oil, divided
3 cloves garlic
3 cups spinach
3 cups water or vegetable broth
1 cup loose polenta (I used Bob’s Red Mill, also available on Amazon)
4 oz goat cheese
½ teaspoon salt

Preheat the oven to 425 degrees. Wash the tomatoes, place on a baking sheet, and pat dry. Drizzle with 1 tablespoon of the oil. Roast for 10 minutes, gently turn the tomatoes, and repeat until the tomatoes are browned, about 30 minutes. You can turn the heat up to 450 at the end to get more browning action.

Heat the remaining 2 tablespoons oil in a large heavy pan. Add the garlic and saute gently until fragrant, but do not brown – browned garlic tastes bitter and gross. When the garlic is smelling incredible, add the spinach and turn off the heat. You should be able to just keep stirring the spinach around for a minute and it will wilt and reduce in size. Transfer to a bowl and set aside. Wipe out the pan with a paper towel.

In the same pan, bring the water/vegetable broth to a bowl. Add the polenta and whisk until smooth. Simmer for 15 minutes or so until the polenta has thickened. Add the goat cheese and the salt and stir until smooth. Taste and adjust as necessary. Serve the polenta immediately with the tomatoes and the spinach.

* The polenta thickens and hardens as it starts cooling – but for this recipe, I liked the polenta soft, so if you need to loosen it up a bit, just add some water or milk and whisk until smooth.

Mixed Beans with Peanuts, Ginger, and Lime

2 pounds mixed snap beans (such as green, wax, haricots verts, and/or Romano), trimmed
½ tsp kosher salt, plus more
5 tablespoons olive oil, divided
½ large shallot, finely chopped
1 1-inch piece ginger, peeled, finely grated
1  lemon grass stalk, tough outer layers removed, finely grated on a Microplane
2 garlic cloves, finely grated
½ tsp ground coriander
Freshly ground black pepper
⅓ cup salted, roasted peanuts
3 kaffir lime leaves, finely chopped
1 tsp finely grated lime zest
3 tbsp fresh lime juice
¼ tsp sugar
⅓ cup (packed) cilantro leaves with tender stems, plus more for serving

Working in batches by type, cook the beans in a large pot of boiling salted water until crisp-tender, 1–4 minutes. Transfer with a slotted spoon to a large bowl of ice water; let cool. Drain and pat dry.
Heat 1 tbsp oil in a small skillet over medium and cook shallot, stirring occasionally, until tender, about 3 minutes. Add the ginger, lemongrass, garlic, and coriander and cook, stirring, until very fragrant, about 1 minute. Transfer to a large bowl; season with salt and pepper.
Heat 1 tbsp oil in the same skillet over medium-high. Cook the peanuts, tossing often, until golden brown and fragrant, about 2 minutes. Transfer to paper towels; let cool, then coarsely chop. Set aside 1 tbsp peanuts for serving.
Whisk the kaffir lime leaves, lime zest, lime juice, sugar, ½ tsp. salt, and remaining 3 tbsp oil into the shallot mixture. Add the beans, remaining peanuts, and ⅓ cup cilantro and toss to coat; season with salt and pepper. Serve topped with more cilantro and reserved peanuts.

Crustless zucchini, onion and ricotta pie

This gorgeous, savory summer pie with a base of fresh ricotta and eggs seasoned with shallots, garlic, and pecorino cheese is the answer to an overly abundant vegetable crop. This version from Italy’s Piedmont region is made with zucchini and onions, but feel free to substitute with peppers, eggplant, squash, even tomatoes.

Serves 6

1⁄4 cup olive oil
2 cloves garlic, thinly sliced
1 shallot, thinly sliced
6 medium zucchini, thinly sliced
1⁄2 cup grated pecorino cheese (not pre-grated)
1⁄2 cup ricotta
1⁄2 cup roughly chopped parsley
4 eggs, beaten
Kosher salt and freshly ground black pepper, to taste
1 tbsp. unsalted butter
3 tbsp. bread crumbs

Heat oil in a 6-qt. saucepan over medium-high heat. Cook the garlic and shallot until golden, 4–6 minutes.
Add the zucchini, cook, stirring occasionally, until golden, about 15 minutes. Transfer to a bowl.
Let cool. Stir in the pecorino, ricotta, parsley, eggs, salt, and pepper.
Heat the oven to 350°F
Grease a 10″ pie plate with butter and coat with bread crumbs.
Spread the zucchini mixture evenly over top; bake until golden on top and slightly puffed, 40–45 minutes.
Serve hot or at room temperature.

Zucchini Parmesan

This is a simple layered casserole with three elements: roasted zucchini, a really good homemade tomato sauce and Parmesan.
Roasting, rather than frying the zucchini, allows you to cut down on olive oil and time.

For the tomato sauce:
2 to 2½ lbs fresh ripe tomatoes
1 tbsp extra-virgin olive oil
1 small onion, chopped
2 to 4 garlic cloves (to taste)
Salt and pepper
1/4 tsp sugar
2 good sprigs fresh basil
1 & 1/2 tbsp chopped fresh basil

For the zucchini Parmesan:
2 to 2¼ lbs zucchini
Salt and pepper
3 tbsp extra-virgin olive oil
½ to 1 tsp red pepper flakes, to taste
¾ to 1 cup freshly grated Parmesan

If you have a food mill, quarter tomatoes. If not, peel, seed and chop them. (See step 5.)

To make the tomato sauce, heat 1 tablespoon olive oil in a large, heavy skillet over medium heat and add onion. Cook, stirring often, until tender, about 5 minutes.
Add the garlic. Cook, stirring, until fragrant, 30 seconds to a minute, and add the tomatoes, salt, pepper, sugar and basil sprigs. Increase the heat to medium-high.

When the tomatoes are bubbling briskly, stir and reduce heat to medium. Cook, stirring often, until the tomatoes have cooked down and are beginning to stick to pan, 15 to 25 minutes, depending on consistency. Remove the basil sprigs; taste and adjust seasoning.
Heat oven to 450 degrees.
Line 2 sheet pans with parchment. Trim the ends off the zucchini and cut in half crosswise, then into lengthwise slices, about 1/4 to 1/3 inch thick. Season on both sides with salt and pepper and toss with 2 tablespoons olive oil. Arrange the zucchini slices on baking sheets in one layer and sprinkle with red pepper flakes. Roast for 12 minutes, until lightly browned and easily pierced with a knife. Remove from the oven and reduce heat to 375 degrees.

If using a food mill, put the sauce through a medium blade. If not, pulse the sauce in a food processor fitted with a steel blade until just coarsely puréed. Stir in the chopped basil.

To assemble the dish, oil a 2-quart gratin with olive oil. Spread 1/4 cup tomato sauce over the bottom of dish. Arrange a third of the zucchini in an even layer over the tomato sauce. Spoon a third of the remaining sauce over zucchini and sprinkle with 1/4 cup Parmesan.
Repeat with 2 more layers, ending with 1/4 cup Parmesan.
Drizzle on the remaining tablespoon olive oil.
Bake 30 to 35 minutes, until bubbling and browned on the top and edges. Remove from the heat and allow to sit for 5 to 10 minutes before serving.
