Bruce’s beautiful broccoli dish

You may not have known but I am married to not only a wonderful composer, but a wonderful cook. Because he’s such a brilliant orchestrator of his own music, that attention to detail works wonders with his food preparations too. He just knows how to combine flavors, textures, tweak, and make all his food look and taste stunning.
This recipe he makes up, so I have had to stand over him and catch the ingredients as he throws them into the bowl, then measure them and give them back to him to re-throw. It has taken several times to get it right and he continues to tweak the recipe but to me, there is no better dish using broccoli out there.

Serves 2, but can easily be augmented

4 Cipollini onions
1 large head of broccoli
1/2 cup whole cashews or slivered blanched almonds
3 cloves garlic or granulated garlic to taste
Dried chili pepper flakes
1/3 cup smoked sun-dried tomatoes (the smoked ones are preferable if you can find them)
1/2 cup good olive oil
salt and pepper

First, fill a large pot of salted water and bring to the boil. This is for the broccoli and onions.
Peel and quarter the onions. Chop the garlic if using real garlic. Cut the broccoli into florets and cut the stems into 1/4 inch slices.

Lightly toast the nuts, then put these into a large bowl. Add the chopped garlic or 4 to 5 shakes of granulated garlic, 4 big pinches of salt and 2 good pinches of dried chili pepper.
Julienne the sun dried tomatoes and add them to the bowl.

When the water is boiling, add the broccoli and onions and cook for 3 minutes only. (Please use a timer for this) Drain and add to the bowl with the nuts and sun dried tomatoes. Add 1/2 cup olive oil, toss together and season very well. It can take a good whack of salt but taste as you season to check.

Dreamy sweet onion bisque

I had this soup at the Capital Grill at the Hermitage Hotel in Nashville recently and thought it was the best soup I had ever tasted. (If you read the ingredients you can see why!)They gave me the recipe and I was blown away by how easy it was to make. You MUST allow the 5 hours for the onions to sweat as that is the secret of the velvety sweetness the soup has. The toasted brie sandwich segment dropped it, plus the bacon and chives take it to even headier heights!

4 to 8 servings.

10 large sweet Vidalia onions
1lb Plugra butter
1 qt heavy cream
Salt and white pepper, to taste
Smoked bacon, crumbled. Get really good quality bacon for this, chop it and saute until crispy
Freshly snipped chives
Brie grilled cheese sandwich

Peel and chop the onions into 1 inch chunks. In a large heavy bottomed saucepan, melt the butter until it becomes foamy and add the onions. Add about 1 tbsp of salt at this point and stir to combine all of the ingredients in the pot and continue to cook for 5 hours until they have completely softened and exuded the majority of their moisture.
Keep in mind that you really don’t want to get any color on the onions during this process so if you see it happening, lower the heat more.
After the 5 hours, add the cream and just heat it through gently.
When everything is hot and combined, you need to puree the soup in a good quality blender. If you want that really velvety texture, pass it through a fine mesh strainer or a mouli after blending it but this is an optional step.

Season with salt and pepper, pour into the bowls and garnish with some smoked bacon, chives and a triangle of Brie grilled cheese sandwich.

Roasted cauliflower with truffled pea pesto and feta crema

I had this at “Etch” in Nashville recently and thought I had died and gone to heaven. It is a stunning appetizer with two fabulous dips and would be wonderful to serve for a dinner party as it’s so easy.

Serve 4 (or 2 if you adore it)

1 head of cauliflower cut into bite sized florets
1 tbsp olive oil plus more for garnish
Salt and pepper
Pea shoots or micro greens for garnish
A few salted almonds or Marcona almonds dropped onto the pea pesto
A few green olives and thinly sliced scallions for garnish

Pea pesto
2 cups fresh blanched peas or 2 cups frozen peas, thawed
2 tbsp butter
1 tbsp water
(Some people swear by adding 2 drops of liquid smoke, but it’s optional)
1 tbsp extra virgin olive oil
¼ cup grated Parmesan
½ tsp salt
1 pinch cayenne pepper
1 tbsp truffle oil
For the pea pesto
In a medium saucepan over medium heat, warm the peas with the butter and water until they are tender.
Add all the ingredients except the truffle oil to a blender, and mix slowly.
Gradually increase the speed until the mixture is creamy, adding truffle oil as you blend.
Add a few drops of water if the mixture is too thick.

Feta crema
4 oz cream cheese, softened
2 oz Greek feta cheese, crumbled
2 tbsp olive oil
1 tbsp fresh lemon juice
1/3 cup cauliflower, shaved with a box grater to snow-like consistency
Salt and pepper
For the Feta Crema
Stir the ingredients together until smooth

For the cauliflower
Preheat the oven to 375 to 400 degrees. In a medium mixing bowl, toss the cauliflower florets with 1 tbsp olive oil and salt and pepper to taste
Spread out the cauliflower on a baking sheet into an even single layer.
Roast until the edges are browned and the florets are easily pierced with a knife, between 15 and 20 minutes
To Serve
Place the roasted cauliflower florets in the center of a serving platter and drizzle with olive oil.
On one side of the florets mound the pea pesto and on the other side, mound the feta crema.
Garnish with the pea shoots or other seasonal micro greens, scallions, olives and almonds.

Great cucumber and avocado salad

The wonderful food blog, “Smitten Kitchen” has come up with a version of a lovely and easy salad to have either as a main course or as a side to some grilled protein.
The salad is gluten-free, dairy-free and vegetarian and takes about 5 minutes to put together.
There are many ways to adapt it, too. You can add some thinly sliced Romaine hearts for bulk, but still leave it predominantly a cucumber and avocado bowl.
The scallions weren’t in the original recipe, so if they’re not your “thing” skip them.
If you’re not into lime, cilantro or parsley, try lemon and dill.
If you’re not into mayo, try using yogurt…

Serves 2 as a main or 4 as a side

3/4 to 1lb seedless cucumber, washed and chopped into chunks
2 thin or 1 regular scallions, thinly sliced
1 large avocado, pitted and diced
2 tbsp mayonnaise (or use or make your own Whole30 complaint mayonnaise)
Juice of half a lime, plus more to taste
Salt and hot sauce (we used Sriracha) to taste
Chopped cilantro or flat-leaf parsley to garnish

Combine the cucumber, scallions and avocado in a bowl.
Whisk together the mayonnaise, lime and seasonings, adjusting levels to taste.
Drizzle the salad with the dressing and garnish with cilantro or parsley.

Watermelon, feta and blackberry skewers

This is wonderfully simple and delicious with the sweet and salty combined and very pretty on the plate. From the food blog, “A healthy life for me”

Serves: 24

1 small seedless ripe watermelon, cut into 1″cubes
6 ounces of Greek Feta cheese, cut into 1” cubes
Fresh ripe firm blackberries
Small wooden skewers

Skewer watermelon chunks, feta and blackberry.
Place on serving platter and store in refrigerator until ready to serve. How easy it that!

Healthy chocolate, coconut overnight oats

This recipe comes from a food blog called ‘Back to her roots” and being a coconut fanatic, that is what first attracted me, then I read the ingredients and fell hook, line and sinker.
Make these in wide mouth mason jars, leave them in the fridge until you have one for breakfast or take one to work. If you want a snack size, make them in a smaller jar.

½ cup rolled oats
1 cup Unsweetened Vanilla Almondmilk Coconutmilk Almond Breeze
2 tbsp unsweetened cocoa powder
⅛ tsp almond extract
1 tbsp chia seeds
2 tbsp unsweetened shredded coconut
2 tbsp maple syrup
Pinch of salt (important)
Shredded coconut, almonds, and dark chocolate chunks for garnish

Combine all ingredients in a bowl, stirring until well-mixed. The mixture will look liquidy.
Transfer to a serving bowl or jar, cover and refrigerate for at least four hours, or preferably, overnight.
Before serving, stir, and top with additional coconut, almonds, and dark chocolate.

Easy meringue gelato cake with chocolate sauce

This must be one of the easiest recipes I have seen for something that looks so elegant and complicated. Thanks to Nigella Lawson for this gem.
You don’t spend long making it, can do it it ahead of time and everyone thinks you’re a genius! I’ll take it!

For the meringue gelato cake
1 ¼ cups heavy cream
1 oz bittersweet chocolate (minimum 70% cocoa solids)
1 tbsp coffee liqueur (and/or rum)
4 oz shop-bought meringue cookies
8 oz raspberries (to serve, optional)

For the chocolate sauce
1 cup heavy cream
⅔ cup bittersweet chocolate (minimum 70% cocoa solids), finely chopped
2 tbsp coffee liqueur (and/or rum)

For the Meringue Gelato Cake:
Line a 450g / 1lb loaf tin with clingfilm, making sure you have enough overhang to cover the top later.
Whip the cream until thick but still soft.
Chop the chocolate very finely so that you have a pile of dark splinters, and fold them into the cream, along with the liqueur.
Now, using brute force, crumble the meringue cookies and fold these in, too.
Pack this mixture into the prepared loaf tin, pressing it down with a spatula as you go, and bring the clingfilm up and over to seal the top, then get out more clingfilm to wrap around the whole tin. Freeze until solid, which should take around 8 hours, or overnight.

To serve, unwrap the outer layer of plastic wrap, then unpeel the top and use these bits of long overhanging wrap to lift out the ice-cream brick. Unwrap and unmould it onto a board and cut the frozen meringue cake into slabs to serve. I like to zig-zag a little chocolate sauce over each slice, and sprinkle a few raspberries alongside on each plate.

For the Chocolate Sauce:
Pour the cream into a saucepan and add the tiny bits of chocolate.
Put over a gentle heat and whisk as the chocolate melts, taking the pan off the heat once the chocolate is almost all melted. If the mixture gets too hot, the chocolate will seize, whereas it will happily continue melting in the warm cream off the heat.
Add the liqueur, still off the heat, and whisk again to amalgamate the sauce completely. Pour into a jug, whisking every now and again until it cools to just subtly warm.

Garlic noodles with mushrooms and miso butter

This is a wonderfully simple recipe from the food blog, “Steamy Kitchen” It’s worth signing up to them, as they have some super recipes with those lovely Asian flavors.
Use either Chinese egg noodles or thin spaghetti noodles.

Serves 4
1/2 pound dry pasta or noodles of your choice
2 tablespoons butter
2 cloves garlic, finely minced
2 green onions (scallions), chopped
12 ounces fresh mushrooms of your choice
2 tablespoons Miso & Easy (or 1 tablespoon regular miso paste)
2 teaspoons Maggi Sauce (or 1 1/2 tablespoons oyster sauce)

Cook the pasta according to package directions. Drain and set aside.
Heat a wok or large saute pan over medium heat. When hot, add the butter, garlic and green onion. Cook for 1 minute or until very fragrant, making sure to keep an eye on the heat so that the garlic does not burn. Add in the mushrooms and cook for 2 minutes. Add in the miso, Maggi Sauce (or oyster sauce) and stir.
Add in the cooked pasta and toss well.

Grilled corn with chiptole cream and cilantro

A super tasty recipe from Rachel Ray. and it’s sweet, smoky and spicy at the same time. This is perfect with some grilled meat or fish from the BBQ.

4-8 appetizer-sized portions

1 cup cream
1 chipotle in adobo sauce, seeded and finely chopped, 1 tsp adobo sauce reserved
Zest and juice of 1 lime, divided
1/2 heaped cup mild crumbling cheese such as queso fresco, Asadero or Cotija, for topping
1/2 tsp dried Mexican oregano
2 to 3 scallions, finely sliced
2 tsp fresh cilantro, finely chopped
4 ears corn, husks and silk removed

Pre-heat the grill to medium-high.

In a small saucepot over a low flame, heat and reduce the cream, chipotle pepper, adobo sauce and lime zest until thick and flavors come together, about 15 minutes. Reserve and keep warm.

While the cream is reducing, mix the crumbled cheese, oregano, scallion and cilantro together in a small bowl and set aside.

Grill the corn until the kernels begin to char evenly. When the corn comes off the grill, let cool slightly and cut the corn off the cobb. Place a spoonful of corn in a bowl, drizzle with the chipotle cream sauce, sprinkle with the cheese mixture and serve with a squeeze of lime

Watermelon Tomato Salad with Cumin and Fennel

Another vegan, dairy-free beauty of a salad (from Food 52) for those hot summer days. If you like, you can add crumbles Greek feta cheese or even sliced Kalamata olives to have some variety, of course it would become vegetarian.

Serves 6

6 cups cubed (1/2-inch cubes) watermelon
2 heirloom or beefsteak tomatoes, cored and cut into 1/2-inch cubes
1 tsp sugar, optional
Salt
1/4 cup sliced mint
Juice of 1/2 lime
1 tsp cumin seeds
1/2 tsp fennel seeds
1 inch ginger, peeled and finely chopped
1/4 tsp turmeric
1/4 tsp chile powder
Juice of 1 lemon
Optional – Greek feta cheese, crumbled
Halved pitted Kalamata olives

Puree 2 cups of the watermelon in a blender and set aside. In a large bowl, combine the remaining watermelon and tomato and toss with the sugar, a large pinch of salt, the mint, and lime juice.

Set a large saute pan over medium heat and add enough oil to thinly coat the base of the pan. When the oil is hot, sprinkle in the cumin, fennel, and ginger, and toast for 30 seconds. Add the turmeric and chile powder, then 1/2 cup watermelon juice, and the lemon juice. Bring to a simmer. Add salt or sugar as desired, and cook for 1 minute.

Pour the sauce over the watermelon and tomatoes and gently fold together. Divide among 6 shallow bowls, and serve.
