Asparagus with labneh, brown butter and burnt lemon

Ottolenghi’s super recipe.

It’s no secret that asparagus enjoys a good soak in the old brown-butter (bubble) bath, which we’ve generously accommodated for. There are so many textures going on here, from tender asparagus to creamy labneh and hints of burnt lemon. The burnt lemon is a clever way to use up excess lemon peel by roasting it on a high heat until nicely charred. The result: a fragrant, bitter and intense condiment to sprinkle on to both sweet and savory dishes. Plan ahead by making the labneh the night before or, alternatively, use store-bought labneh or some thick-set Greek yoghurt.

Serves 4

900g thick-stemmed asparagus (2–3 bunches), woody ends trimmed (450g)
3 tbsp olive oil
70g unsalted butter
2 sprigs of thyme, plus 1 tsp picked leaves
1 tsp light soft brown sugar
salt and black pepper

Labneh:
650g Greek-style yoghurt
1 garlic clove, peeled and crushed

Burnt lemon:
2 unwaxed lemons

1. Make the labneh by putting the yoghurt and ½ teaspoon of salt into a bowl and mixing well to combine. Line a medium sieve with a piece of cheesecloth or a clean tea towel, with plenty of cloth hanging over the sides. Add the yoghurt, using the overhanging cloth to completely encase it, then set the sieve over a clean bowl and place a weight on top (a couple of tins will do). Refrigerate overnight. When the labneh is ready, discard the liquid collected and transfer the labneh to a clean bowl. You’ll make about 300g of labneh. Stir in the garlic and set aside.

2. Preheat the oven to 220°C.

3. Make the burnt lemon. Use a vegetable peeler to peel the lemons into long strips – don’t worry if you get some of the pith. You want 30g in total. Set aside a couple of strips and put the remainder on a small baking parchment-lined baking tray. Bake for 9–12 minutes, until completely dry and mostly blackened (they’ll shrivel up significantly). Finely grind with a pestle and mortar, then pass through a sieve, to catch any large pieces (discard these). Set the burnt lemon powder aside. Scrape away any pith from the reserved strips, and very finely julienne them. Set aside.

4. Reset the oven to a high grill setting. Put the asparagus, oil, ¾ teaspoon of salt and a good grind of pepper on a large baking tray lined with foil, give everything a good mix, then arrange the spears so they’re not overlapping. Grill on the highest shelf for 8–10 minutes, until tender and nicely browned. Ovens can vary, so check at the 6-minute mark.

5. Meanwhile, make the browned butter by first putting the butter into a small saucepan and placing it on a medium-high heat. Once melted, continue to cook for a further 3–4 minutes, swirling the pan occasionally, until nicely browned and smelling nutty. Add the thyme sprigs (careful, the fat will spit!), then stir in the brown sugar, ¾ teaspoon of the burnt lemon powder and ⅛ teaspoon of salt. Set aside to cool down slightly, about 5 minutes.

6. While the butter is cooling, segment one of the peeled lemons. Use a small sharp knife to trim away any excess pith, then cut between the membranes to release the segments and roughly chop each into 3–4 pieces. Juice the remaining lemon to give you 4 teaspoons of juice. Add the juice and all the segments to the browned butter mixture.

7. Spread the labneh out on a platter or plate, and top with the asparagus, so that the spears are all facing in the same direction. Pour over the browned butter, then scatter over the picked thyme. Lastly, sprinkle with ¼ teaspoon of the burnt lemon powder and the lemon strips.

6 ingredient lemon ginger sauce to serve with roasted asparagus

This is the perfect side dish to any dinner! It’s ready in 20 minutes and is totally vegan & oil-free!

12 oz asparagus spears, washed and patted dry
salt and pepper
1/4 of a lemon

LEMON GINGER SAUCE (makes 1/2 cup)
1/4 cup (60g) water
2 tbsp (30g) fresh lemon juice
1/4 cup (64g) roasted creamy almond butter
2 tsp (8g) peeled and finely grated fresh ginger
2 tsp (10g) agave or maple syrup
2 medium garlic cloves (5g)
1/4 tsp ground turmeric powder
1/4 tsp fine salt + 1/8 teaspoon pepper

NOTE
Don’t worry about this sauce being spicy. The ginger gives amazing ginger flavor, but it is not spicy at all. The lemon juice, almond butter and agave all balance it out like a dream.
I’d suggest making the sauce early in the day or the day before. While it’s not totally necessary, it does thicken as it sits. But it’s delicious immediately.

Preheat the oven to 425°F and line a pan with parchment paper.

Trim the ends off of each asparagus about 2-3 inches. Place on the pan spread out evenly. Squeeze the juice of 1/4 of a lemon over the asparagus. Season with salt and pepper.
Bake for 8-9 minutes until fork tender, but still firm. You don’t want them overcooked and limp, but not raw either. Depending on the thickness of the spears, time may need adjustment by a minute or so.

While the asparagus is roasting, make the sauce.
Add the water, lemon juice, almond butter, ginger, agave, garlic, turmeric, salt & pepper to a food processor or a Vitamix, if you have one. Either will work fine. For the ginger, you want to make sure you get the right amount, so weigh after peeling. I basically grated a large piece of fresh ginger over a bowl and then measured.

Blend everything on low, slowing increasing speed, until smooth. Scrape the sides down well and blend once more on low. It will be a fairly runny sauce, like a salad dressing. This is so it drizzles easily over the asparagus.
But it does thicken overnight or several hours in the fridge. It also doubles beautifully to toss as a salad dressing in greens. So so good.
Drizzle over the hot asparagus and serve immediately.
You will be tempted to drink the sauce!

Shrimp and Asparagus Stir fry

A lovely, super healthy, super tasty and super low calorie meal

Serves 4

4 tbsp olive oil
1 lb raw shrimp
1 lb asparagus, cut into 3″ pieces
1 tsp salt
1/4 tsp crushed red pepper, or more if you like it spicy
1 heaped tsp garlic, minced
1 heaped tsp fresh ginger, minced
2 tbsp coconut aminos or low sodium soy sauce
2 tbsp lemon juice
6 scallions, chopped

In a large frying pan, heat 2 tablespoons olive oil over medium-high heat.
Add shrimp to the pan, then season with 1/2 teaspoon of salt and 1/4 teaspoon crushed red pepper. Cook until the shrimp is pink. Remove the shrimp from the pan and set aside.
In the same pan, heat 2 tablespoons olive oil and add asparagus.
Add ginger and garlic, then season with 1/2 teaspoon of salt. Stir frequently and cook until the asparagus is tender-crisp, adding in the chopped scallions halfway.
Return the shrimp to the pan then add the soy sauce/coconut aminos. Stir until the ingredients are well combined. Just before the dish is ready, add lemon juice, stir once more, then serve while hot.

Grilled asparagus with caper salsa

This is a really super recipe I got from the NYT and the salsa really complements the asparagus beautifully. If you can’t get the right goat cheese that crumbles easily, you can use crumbled feta cheese too.

3 bunches asparagus, approximately 1lb, woody ends trimmed and discarded
2 tbsp extra-virgin olive oil
Kosher salt and freshly cracked black pepper to taste
¼ cup capers, ideally small, drained, rinsed and patted dry
Grated zest of 1 lemon
2 tsp lemon juice
1 small garlic clove, peeled, crushed and minced
⅓ cup parsley leaves, roughly chopped
½ cup crumbled caprino fresco cheese, or another soft goat cheese like chèvre, or crumbled feta if you can’t get the right goat cheese

Fill a medium-size pot with cold water, and place it over high heat. When the water boils, add the asparagus, and blanch for 1 minute.
Drain the asparagus, and rinse it immediately under cold water. Drain the asparagus again and place in a medium bowl, with 1 tablespoon of the oil, a pinch of salt and a generous grind of black pepper.
Mix gently, and set aside.

Light a charcoal or gas grill, or place a grill pan on the stove over high heat. Once it is hot, add the asparagus in batches, and grill for approximately 2 to 3 minutes, turning a few times, until the spears are lightly charred. Transfer to a large platter with all the tips facing in one direction.

Meanwhile, make the salsa. Mix together the capers with the remaining tablespoon of oil, the lemon zest, lemon juice, garlic and parsley. Add the goat cheese to the mixture, stir gently and spoon over the asparagus.

Weekend soup (using whatever you have left in the fridge)

When the weeks are cooler, I tend to open the fridge doors and haul out any vegetables that could go into a soup. You will be surprised what wonderful concoctions you can come up with and how much soup you can make from very little.
Don’t overthink it and definitely don’t measure anything as soups are one of the most forgiving and inventive things you can make.

This week my ingredients are;

4 large onions, peeled and chopped
1 large turnip, peeled and chopped
6 carrots, peeled and chopped
1 1/2 head of celery, including leaves, peeled of stringy stuff
1 butternut squash, peeled, cubed, tossed in olive oil and seasoning and roasted at 350 degrees for 45 mins
1 whole cauliflower, broken into florets
about 12 asparagus spears, snapping off the tough ends and chopping into 1 inch lengths
5 zucchini, halved then quartered lengthways and chopped across into 3/4″ pieces
3 heads of broccoli including stems chopped
1 whole bunch fresh parsley stalks and all
french green beans, trimmed and chopped into 1″ lengths

4 to 6 (32 oz) containers chicken broth. (You can use vegetable broth if you’re vegetarian, but I think chicken broth adds far more flavor.

I put about 1/4 cup of olive oil and about 3 tbsp butter into the bottom of a very large soup stock pot, then in goes the onions, turnip, carrots, celery, cauliflower, broccoli and everything else, stirring as I go so everything mixes together.
After about 15 minutes of this, add the broth, stirring and it should cover the vegetables with an extra level of about 1 to 2 inches, so the soup isn’t too thick.

Let the soup bubble away, stirring it every 20 mins, for about 45 mins at least, until all the vegetables are soft. Taste the juice and season with salt and pepper, but not too much as this is something you can do after you have pureed it.
When it’s cooked, take it off the heat and leave aside for about 1 hour until it’s not so hot. Puree the soup in a blender and at this stage you can add a little cream for a more velvety texture, some soft goat cheese for a really lovely flavor and even some grated mature cheddar or Parmesan cheese, returning it back to a large saucepan after it’s pureed.
Put back on the heat, taste and season until it tastes perfect.

Just remember, play with it, even adding some chopped pancetta or bacon when you fry the vegetables and know that this huge pot of flavorful goodness will feed you for quite a long time and cost nothing more!

Addictive asparagus

This recipe is really special as it combines the most wonderful melange of flavors that complement asparagus so beautifully

Serves 4

4 oz pancetta or prosciutto cut into 3/8 inch to 1/4 inch dice
1 tbsp butter, ghee or clarified
1lb asparagus, woody ends trimmed and sliced into 2 inch pieces on the bias
1 1/4 cups leeks, thinly sliced crosswise (white and pale green parts only)
2 cloves garlic, minced
Zest of one lemon
1 teaspoon orange zest
2 tbsp toasted pine nuts or almonds
1-2 tbsp Italian parsley, chopped
Salt and freshly ground pepper to taste

In a large non-stick pan, sauté the pancetta, stirring frequently, over medium heat, until crisp and lightly golden. Remove onto some paper towels to get rid of some of the oil. Wipe the pan clean and  add 1 tbsp of butter to pan. Add the asparagus pieces and leeks and sauté until the asparagus is tender crisp, about 3-4 minutes.
Add the garlic, lemon and orange zest, toasted pine nuts and parsley and sauté for about 1 minute, until fragrant. At the last minute, stir in the pancetta and heat through for about 1 minute.
Season to taste with freshly ground pepper and salt and serve immediately.

Asparagus and crab salad

This makes a light and gorgeous start to a casual dinner party or even an “al fresco” dinner.

20 asparagus spears, trimmed
2 oz baby arugula leaves
4 oz white crab meat

For the dressing
3 tbsp creme fraiche
1 tbsp wholegrain mustard
juice ½ lime
brown crab meat, if you have it, but it’s not crucial to the recipe, rather more luxurious!
olive oil, for drizzling

Bring a large pan of salted water to the boil and cook the asparagus for 2 mins until just cooked.
Drain, tip into iced water to refresh and drain again. Cut each spear on the angle into 2-3 pieces.

For the dressing
Mix all the ingredients together with some brown crab meat, if you have it.
Toss the asparagus through the dressing, then build a nest of asparagus spears on plates.
Place some white crab meat in the center of each nest, top with a small bundle of rocket.
Drizzle everything with a little olive oil before serving.

Asparagus, orange and goat cheese salad

Light and so gorgeous! It’s also lovely with some sliced cooked beets added.

Serves 4

11 oz thin asparagus spears
1 1/2 cups watercress or baby arugula
1/2 small red onion, very thinly sliced
1 orange, cut into 12 segments, pith, pips and skin removed
1 tbsp fresh orange juice
1 tsp finely grated orange zest
1 tsp sugar
1 tbsp red wine vinegar
2 tsp poppy seeds
2 tbsp good olive oil
2 1/2 oz soft goat’s cheese

Cook the asparagus in boiling water for 1 to 2 minutes or until just tender. Rinse under cold water to cool, then combine with the watercress or arugula, red onion and orange segments on a serving dish
Combine the orange juice, sugar, red wine vinegar and 1 1/2 tsp poppy seeds in a pitcher.
Whisk in the oil with a fork until combined and drizzle over the salad.
Crumble the goat’s cheese over the salad and season to taste with salt and pepper.
Sprinkle the remaining 1/2 tsp poppy seeds over the salad before serving

Broiled asparagus, orange slices with olive oil and shallots

Another lovely, fragrant accompaniment with chicken, fish or just rice.

Serves 4 as a side dish

1lb asparagus, woody stem ends snapped off and discarded
2 tbsp extra virgin olive oil
Kosher salt and freshly ground black pepper
2 shallots, thinly sliced and separated into rings
6 very thin orange slices, cut into quarters (unpeeled)
1/2 tsp grated orange zest

Adjust an oven rack to as close to the broiler as possible. Heat the broiler on high.
In a bowl, toss the asparagus with the oil to coat and season with salt and pepper.
Arrange the shallot slices in a thin layer on one side of a rimmed baking sheet.
Put the asparagus in a single layer on top of them.
Toss the orange slices with the leftover oil in the bowl you used for the asparagus.
Arrange them in a single layer alongside the asparagus.
Broil until the asparagus and the oranges start to char, 5 to 8 minutes.
Remove from the oven and sprinkle the asparagus with the orange zest.
Arrange the asparagus, shallots and oranges on a serving dish.
Serve hot, warm or at room temperature

Grilled asparagus,mozzarella, prosciutto and melon salad

Thank you to Giada De Laurentiis for this recipe. I like to serve this with a fillet of broiled wild salmon on the side.

4 -6 servings

3 oz thinly sliced prosciutto
1 lb asparagus
2 tsp extra virgin olive oil, plus 2 tbsp
Kosher salt and freshly ground black pepper
2 tbsp fresh lemon juice
1/4 small melon (about 12 oz) peeled, seeded and cut into 1/2″ cubes
4 oz fresh mozzarella, cut into 3/4″ cubes
2 tbsp pine nuts, toasted

Place an oven rack in the center of the oven. Preheat the oven to 350F
Line a baking sheet with parchment paper. Place the prosciutto in a single layer on the prepared baking sheet. bake for 12- 14 minutes until crispy. Drain on paper towels. Chop the prosciutto into 1/4″ pieces
Place a grill pan over medium high heat or preheat a gas or charcoal grill. In a medium bowl toss together the asparagus and 2 tsp olive oil. Season with salt and pepper. Grill for 2- 3 minutes each side until crisp tender.
In a medium bowl combine the lemon juice and 2 tbsp olive oil. Whisk until combined. Season with salt and pepper to taste. Add the melon and mozzarella cheese and toss until all ingredients are combined.
Arrange the asparagus on a platter. Using a slotted spoon, spoon the melon and mozzarella cheese on top of the asparagus.
Drizzle any remaining vinaigrette over the top. Sprinkle the prosciutto and pine nuts on top and serve.

To toast the pine nuts, arrange in a single layer on a baking sheet. Bake in a preheated 350F oven for 8 to 12 minutes until lightly browned
