Grilled stuffed Portabello Mushrooms stuffed with Italian sausage, spinach and mozzarella

 
Serves 4.  Great for a BBQ.  This is from a great food blog.

4 large Portobello mushrooms (get the biggest ones you can find)
12 oz. mild or hot Italian sausage
1-2 T olive oil (for browning sausage and onions and brushing on mushrooms before grilling)
1 small onion, finely chopped
1 tsp. minced fresh garlic
1/2 cup tomato sauce or marinara sauce
pinch red pepper flakes (optional)
8 oz. coarsely chopped spinach leaves
2 T chopped fresh basil
2 T chopped fresh parsley
3/4 cup freshly grated parmesan cheese

3/4 cup grated mozzarella, plus 1/2 cup for sprinkling on topPreheat gas or charcoal grill to high heat. Heat a small amount of olive oil in heavy frying pan, then crumble Italian sausage into pan and cook about 5 minutes, breaking apart with back of the turner as it cooks. When sausage is well-browned, remove to bowl.

If needed, add a bit more olive oil, then saute onions until they’re starting to soften, about 2 minutes. Add garlic and continue cooking until onions are starting to brown, a few minutes more. Add Italian sausage back into pan, then add red pepper flakes and tomato sauce and simmer 2-3 minutes while you chop the spinach.

Add chopped spinach and let it wilt and cook down, stirring so it’s evenly distributed in the sausage/onion mixture. Turn off heat and stir in 1/2 cup mozzarella, 1/2 cup grated parmesan cheese and chopped basil and parsley.

Remove stems from mushrooms caps, being careful not to break them then brush both sides of mushrooms with olive oil. Put mushrooms on grill, inside facing down, and cook about 4 minutes, until mushroom is slightly browned and starting to soften.

Remove mushrooms from the grill. (I put them on a wooden cutting board.) Carefully stuff the inside of each mushroom with sausage/spinach/cheese mixture, then top each mushroom with about 2 T grated mozzarella and parmesan cheese.

Carefully put mushrooms back on grill, stuffing facing up of course! Cover grill and cook about 5 minutes, checking often and removing from grill when mushrooms are cooked through, and cheese is melted and starting to brown, and stuffing mixture is hot. Serve immediately.

Pumpkin sausage meat muffins with cranberry glaze

These are so cute and easy!
Makes 12 muffins.

1 cup finely chopped onion
8oz mushrooms, chopped finely
3 cloves minced garlic
1lb pork sausage meat (I used Sweet Italian sausagemeat)
1 cup pumpkin puree, either canned or homemade from roasted butternut squash
1 egg
1/3 cup rolled oats
1 tsp each minced thyme, sage and rosemary
Freshly ground pepper and salt
1 tbsp Worcester sauce

1 cup cranberries
1/4 cup sugar
1/4 cup water
grated zest of one orange

Preheat oven to 400F. Spray a standard 12 cup muffin tin with non stick cooking spray.

In a non stick skillet over medium heat, cook the onions until softened, about 8 minutes. Add the mushrooms and garlic and cook for about 5 minutes more, until vegetables are tender. Add to a bowl with the sausage meat, pumpkin, egg, oats,sage,rosemary and thyme, salt and pepper.
Toss gently to combine. Divide the mixture evenly among the muffin tin. Place in the oven, bake for about 20 minutes.

Combine cranberries, sugar, orange zest and water in a small saucepan. Bring to the boil and then simmer for 10 to 15 minutes. Spoon onto the meatloaf muffins and bake for another 15 minutes.
Remove from the oven and let rest for 5 minutes before serving.

Spinach, mushroom and lemon pilaf (CleanCuisine)

This is very easy and has a really clean zesty flavor.
It comes from the BBC Good Food website, always a great resource!

Ingredients

1/2 lb spinach, washed and roughly chopped
1 lemon, zested and juiced (you may not need to use the whole lemon in the recipe)
2 garlic cloves, crushed
2 tbsp butter
8oz basmati rice
4oz chestnut mushrooms, sliced
2 onions, finely sliced
14 fl oz chicken or vegetable broth
1 cinnamon stick
4 whole cloves
4 bruised green cardamon pods

Method

Cook the onion and garlic in the butter in a large shallow pan until soft and golden.
Add the mushrooms and cook until softened.
Add the spices and cook, stirring for 2 minutes, then stir in the rice, lemon zest and stock. Cover.
Cook on a gentle heat for about 15 minutes until the liquid has been absorbed.
Stir through the spinach and lemon juice, cover for 2 minutes until wilted and serve.
Serves  4 – 6 people

My quick pesto mushroom starter

This is ever so quick and tasty, especially if you have your own homemade pesto, but a good brand of store-bought pesto works really well too. I haven’t given measurements as it’s a recipe to be creative with!

Preheat oven to 450 degrees

Serves 4

4 large portobello mushrooms
about 2 tbsp pesto sauce per mushroom (preferably homemade)
2 large balls of fresh mozzarella (the ones in water)
good olive oil
Parmigiano Reggiano cheese, grated
ground pepper
lightly toasted pine nuts, (about 1 tbsp per mushroom)

Wipe the mushrooms clean with a damp cloth, do not wash under running water, remove the stalks and put on a baking tray dark side up.
Sprinkle each with olive oil then put in the pesto sauce.
Top the pesto with torn up pieces of mozzarella cheese and sprinkle the pine nuts over.
Season with ground pepper and a little kosher salt. Add grated parmesan cheese, about 1-2 tbsp per mushroom.
Put under a broiler first and cook on a medium heat so as not to burn the pine-nuts, then if the mushrooms are still too raw, put them on the top shelf in the oven for about 10 minutes to soften them.

Serve!

Jerusalem artichoke and mushroom dauphinoise

This is almost sexy in it’s unctious creaminess!!
Make sure the artichokes are tender when you cook them, because when I cooked this the first time, they weren’t!

1 1/2 lbs Jerusalem artichokes (or sunchokes)
2 tbsp olive oil
1 sliced onion
2 crushed cloves of garlic
5 cups cremini mushrooms, sliced
1 cup creme fraiche or sour cream
2/3 cup light cream or whole cream
1 tbsp whole grain mustard
1 good pinch freshly grated nutmeg
1 lemon, grated zest only
1 heaped tbsp chopped fresh parsley
3/4 cup grated gruyere cheese

Preheat oven to 350 degrees
Cook artichokes in lightly salted boiling water for 15 minutes or until tender.
Meanwhile, heat 2 tbsp olive oil in a large pan. Add 1 sliced onion and 2 crushed cloves garlic and saute for 3 minutes until soft.
Increase the heat and add the sliced mushrooms and cook for 5 to 10 mins tossing occasionally, until golden.

Drain the artichokes and refresh under cold running water. Drain again and peel.
Slice any large artichokes into thirds and arrange in a shallow 1 1/4 quart dish with the mushroom mixture.

In a bowl mix together the sour cream, (or creme fraiche)  light cream, whole grain mustard, freshly grated nutmeg, grated zest of a lemon and chopped parsley. Season well and pour over the vegetables.
Sprinkle the top with the grated gruyere cheese and bake for 30 to 40 minutes until golden and bubbling.
Serve immediately.

Mushroom Bourguignon

The best part about this — well, besides all of it, — is that it’s a bourguignon without the heft of beef, but all of the indulgence. Plus, since you don’t need to braise it in the oven for three hours, it can be a weekday night dinner.
Serves 4
2 tablespoons olive oil

2 tablespoons butter, softened

2 pounds portobello mushrooms, in 1/4-inch slices (save the stems for another use) (you can use cremini instead, as well)

1/2 carrot, finely diced

1 small yellow onion, finely diced

2 cloves garlic, minced

1x cup full-bodied red wine

2 cups beef broth
2 tablespoons tomato paste

1 tsp fresh thyme leaves (1/2 teaspoon dried)

1 1/2 tablespoons all-purpose flour

1x cup pearl onions, peeled (thawed if frozen)

Egg noodles, for serving

Sour cream and chopped chives or parsley, for garnish (optional)
Heat 1 tbsp of olive oil and 1 tbsp of butter in a medium Dutch oven or heavy saucepan over high heat. Sear the mushrooms until they begin to darken, but not yet release any liquid — about three or four minutes. Remove them from pan.
Lower the flame to medium and add the second tbsp of olive oil. Toss the carrots, onions, thyme, a few good pinches of salt and a several grinds of black pepper into the pan and cook for 10, stirring occasionally, until the onions are lightly browned. Add the garlic and cook for just one more minute.
Add the wine to the pot, scraping any stuck bits off the bottom, then turn the heat all the way up and reduce it by half. Stir in the tomato paste and the broth. Add back the mushrooms with any juices that have collected and once the liquid has boiled, reduce the temperature so it simmers for 20 minutes, or until mushrooms are very tender. Add the pearl onions and simmer for five minutes more.
Combine remaining butter and the flour with a fork until combined; stir it into the stew. Lower the heat and simmer for 10 more minutes. If the sauce is too thin, boil it down to reduce to the right consistency. Season to taste.
To serve, spoon the stew over a bowl of egg noodles, dollop with sour cream (optional) and sprinkle with chives or parsley.
