Roasted red onions with butter, honey,thyme and balsamic vinegar

My son, Oliver found this recipe, made it and adored it. It’s rich but low calorie (ish) and very moreish.

Serves 6

6 tbsp butter
3 tbsp balsamic vinegar
1/2 cup honey
1/2 bunch fresh thyme
salt and freshly ground black pepper
4 red onions, quartered

Preheat the oven to 350F

Combine the butter, honey, thyme, salt and pepper in a small saucepan over medium heat.
Bring to a simmer and cook for 1 minute to reduce slightly.
Place the onions in a single layer in a baking pan.
Drizzle the butter/vinegar mixture over and roast until soft and slightly caramelized, about 45 to 60 mins (or more if necessary)

Zucchini Provencal

This is our favorite way of having zucchini as the onions are so sweet underneath, enhanced by the parmesan cheese and herbes de provence.

Serves 4

5 – 6  medium sized zucchini, sliced on the 1/4 inch, diagonally
3 large yellow onions, sliced
2 large cloves garlic, crushed
2 heaped tsp herbes de Provence (or if you don’t have it, try dried thyme)
1 cup grated Parmigiano Reggiano cheese
salt and pepper
3 tbsp olive oil
2 tbsp butter

Preheat the oven to 350F
Heat a heavy bottomed frying pan on medium heat and put in 3 tbsp oil and 2 tbsp butter.  When the butter has melted, put in the sliced onions and stir to coat the onions in the butter/oil mixture.
Season with salt and pepper, stirring, then turn the heat to low and let the onions caramelize for about 30 minutes, stirring occasionally to prevent sticking on the bottom.
When they start to turn a lovely beige color and soften, tip them into the base of a baking dish with flat sides. (10″ by 8″ approximately)
Sprinkle about 1/3 of the parmesan cheese on top of the onions, then season with salt and pepper and sprinkle 1 tsp of the herbes de Provence over the onions.
Slice the zucchini on the diagonal, then lay in rows, just overlapping at the wide side.
Season the zucchini and sprinkle the remaining herbes de Provence and parmesan cheese over the top.
Drizzle the top with some olive oil and bake for about 30 to 40 minutes or until the zucchini are tender and the top is browned.
Test the zucchini by pushing a fork of skewer into the thickest one.

Eternal slow-cooker chicken broth

I was reading about this today and went straight to the freezer where I had a bag of two organic roast chicken carcasses waiting for recycling.
What a great idea and to have the slow cooker on all day every day for a week (making the house smell divine) and just top up the slow cooker with water when necessary.
When removing any broth for use, strain it through some cheesecloth or a (spare) reusable coffee filter, so that all the herbs, chicken bits and vegetables stay behind, also producing a clearer broth, then replace the used broth with more filtered water.
Do this for up to a week, extracting every bit of goodness from that chicken carcass then throw it all away and start all over again with a new roasted chicken carcass or whole chicken.

This recipe is for you to improvise. It gives a guide to what you can put in the broth, but you can make an Asian broth by adding fresh ginger, lemon grass, star anise etc

1 whole chicken (or the carcass of a roasted chicken)
4 bay leaves
1 tbsp black peppercorns
1 tbsp white peppercorns
1 large onion, chopped into chunks
2 carrot, chopped into chunks
3 stalks of celery, chopped into chunks
1 or 2 leeks, chopped into chunks
bunch of fresh thyme, sage and Italian parsley, stalks and all
Filtered water

Put the chicken or chicken carcase into the slow cooker then pile in everything else, stirring and mixing together.
Cover with the filtered water and cook on your lowest setting for ONE WEEK.
After 24 hours or so, you may begin using the broth.
As you need it, simply dip a ladle into the broth to remove the stock. Pour it through some cheese cloth or a fine mesh strainer.
Replace the broth with an equivalent amount of filtered water.
If you are using a whole chicken, you can remove the chicken meat as you need it and use it in other dishes, like stir fries, soups or sandwiches.

At the end of the week, strain off any remaining broth, save or freeze, then discard or compost the bones. The bones by this time will pretty much crumble when pressed between your fingers.
The softness of the bones shows that most of the nourishment (minerals, amino acids etc) have leached from the bones into the broth you’ve been enjoying all week.

Wash the insert of your slow cooker and start al over again!

Grilled fennel & walnut & lentil tabouleh with pomegranate

Truly different, exotic and quite exciting to taste! Make sure the fennel is well grilled and if you don’t think it’s soft enough, put them on a baking tray in a very hot oven for about 10 minutes max.

Serves 4 -6

200 g Puy lentils (I used the vacuum packed ones you can buy)
5 medium fennel bulbs
30 ml white wine vinegar
80 ml pomegranate molasses
80 ml extra virgin olive oil
Sea salt and freshly ground black pepper
3/4 cup natural yoghurt
300 g walnuts, roasted and chopped
1/2 cup chopped flat leaf parsley
1 red onion, finely diced
zest and juice of 2 lemons
seeds of 1 pomegranate or 1 packet of pomegranate seeds

In a large saucepan, boil the lentils until al dente (20 to 30 mins). Drain and rinse under cold water. Set aside.
OR
Open a ready cooked vacuum pack of puy lentils, measure out 200 g, put them into a microwave dish and heat up for 2 minutes, then break apart the lentils with a fork and set aside.

Cut each fennel bulb lengthwise into 6 wedges Grill or bbq over medium heat for about 20 minutes until tender. Set aside. (You could use a George Foreman grill for this too)

For the dressing, whisk together the vinegar, pomegranate molasses and olive oil and season well.
Season the yoghurt with sea salt and black pepper and refrigerate

Combine the remaining ingredients except the pomegranate seeds and season

Serve the tabouleh over the fennel slices, scatter the pomegranate seeds over and drizzle with the dressing and the yoghurt

Good with a Sauvignon Blanc

Salmon Rilette

A fellow Los Angeles food blogger called “The Pasadena Chef” posted this and it is divine!!
If you are talking fish in NYC there is no better restaurant than Le Bernadin. Chef Eric Ripert is a genius and I came across this recipe for his house starter which is served before every meal.

2 cups dry white wine
1 tbsp minced shallots
1 lb fresh boneless, skinless salmon fillet, cut into 1 inch pieces
3 oz smoked salmon, diced
2 tbsp fresh chives, chopped
1/2 cup a good mayonnaise
3 tbsp fresh lemon juice
sea salt and freshly ground black pepper
toasted baguette slices

Combine the white wine and shallots in a saucepan and bring to a boil.

Simmer over medium heat for 2 minutes until the shallots are tender. Add the salmon pieces and poach for just 2 – 3 minutes until they are barely opaque.

Remove the salmon pieces from the wine with a slotted spoon and drain them on a baking sheet lined with kitchen towel. Strain the wine reserving the shallots. Place both salmon and shallots together and put into the fridge to cool.

Combine the cooled salmon pieces, shallots, smoked salmon, chives and some mayonnaise and lemon juice and gently fold together

Use the lemon juice and mayonnaise sparingly, so you have just enough to moisten the mixture. It will need salt inspite of the smoked salmon.

Serve cold with the toasted baguette slices. This is lovely served with champagne or a white burgundy

Salmon with coconut sauce on a bed of curried onions and peas

This may not be the most beautiful picture, but the actual dish was tremendously flavorful and interesting with the different spices.
Although the onions I put underneath the salmon aren’t in this picture, it’s well worth doing instead of rice.

Serves 2

Ingredients
4 -6 tbsp genuine coconut oil, divided  (The healthiest oil there is, available from Wholefoods))
1 tbsp finely chopped ginger
1 tsp fennel seeds
1 tsp cardamon seeds
1 tsp brown mustard seeds

1 tbsp ground coriander, plus 1/2 tsp to season the salmon
1/4 to 1/2 cup of chopped tomatoes. (a good quality tinned one is okay)
1 cup coconut milk
salt and ground pepper to season
2 (6 ounce) fillets of wild salmon, skinned

For the onion dish
1-2 tbsp coconut oil
4 large onions
1 cup frozen petit pois, boiled till cooked
1 tsp turmeric
1 tsp medium curry powder
1/2 tsp cardamon seeds
salt and pepper

For the sauce
Put 2 tbsp coconut oil into a large skillet over low-med heat then add the ginger.
Saute for 30 seconds and then add the fennel seeds, cardamon seeds, brown mustard seeds and ground coriander and cook for 10 seconds.
Add the tomatoes and cook for 3 minutes, stirring well. Pour in the coconut milk and simmer for about 15 minutes until the sauce is thickened.
Taste for seasoning and add salt and pepper, if necessary.

For the onions
Slice the onions fairly thickly. Heat the coconut oil in a large skillet to low-med and add the onions, stir frequently and add the turmeric, curry powder, cardamon seeds, and salt and pepper.
Slowly caramelize the onions, stirring for about 30 minutes.
Meanwhile, boil the peas or petit pois and add them to the onions mixture in the last 5 minutes of the onions’ cooking. The dish will have a nice deep yellow color and be very flavorful with the cardamon seeds.

For the salmon
Sprinkle the 1/2 tsp ground coriander, salt and pepper on both sides of the salmon fillets. Heat the remaining coconut oil in a nonstick skillet over medium high heat. When it is hot, sear the salmon fillets on each side for 7 – 8 minutes total or until they are just cooked through.

Plating
Put a large spoonful of the onion mixture on a plate, lay a piece of salmon across them and ladle the sauce over the salmon.

Ina Garten’s Spinach Gratin

This is a must in our home at Thanksgiving. It’s rich but oh so good!

Serves 8

4 tbsp (1/2 stick) unsalted butter
4 cups chopped yellow onions (2 large)
1/4 cup flour
1/4 tsp freshly grated nutmeg
1 cup heavy cream
2 cups whole milk
3 lbs frozen chopped spinach (5x 10oz packages)
1 cup (at least) freshly grated parmesan cheese
1 tbsp kosher salt
1/2 tsp freshly ground black pepper
1/2 cup (at least) grated Gruyere cheese

Preheat the oven to 425 degrees F
Melt the butter in a heavy-bottomed saute pan over medium heat. Add the onions and saute until translucent, about 15 minutes. Add the flour and nutmeg and cook, stirring, for 2 more minutes.
Add the cream and milk and cook until thickened.
Squeeze as much liquid as possible from the spinach and add the spinach to the sauce. Add 1/2 cup of the Parmesan cheese and mix well. Season to taste with salt and pepper.
Transfer the spinach to a baking dish and sprinkle the remaining 1/2 cup Parmesan and the Gruyere cheese on top.
Bake for 20 minutes until hot and bubbly. Serve hot

Ginger cranberry sauce

This is vibrant and tangy and the ginger gives it a somewhat exotic flavor.

1 large red onion cut into 1/4 inch dice
1 tbsp minced fresh ginger
1lb fresh cranberries
zest and juice of 3 large oranges
2 tbsp brown sugar
salt and pepper to taste

In a non-reactive saucepan coated lightly with oil on a medium heat, saute the onions, ginger and orange zest until soft, about 4 minutes.
Add the cranberries, orange juice, sugar and season.
Simmer for 30 minutes until very soft.
Check for seasoning and put aside until needed, or freeze until Thanksgiving/Christmas

Lawry’s original creamed spinach

I am a creamed spinach “nut” and have been trying to find the recipe Lawry’s restaurant use, as it’s so tasty.
I finally found it and it’s incredibly easy and GREAT! A good side for Thanksgiving too.

Serves 8

6 slices bacon, finely chopped
1 cup finely chopped onions
‘1/4 cup flour
2 tsp Lawry’s seasoned salt
1/2 tsp Lawry’s seasoned pepper
1/2 tsp Lawry’s garlic powder
1/4 tsp parsley
1 3/4 cups whole milk
2 (10 oz) packages frozen spinach, cooked and drained

In a medium skillet, cook the bacon until almost crisp.
Add the onion and cook until the onion is tender, about 10 minutes
Remove from the heat.
Add the flour and seasonings, blend well.
Gradually stir in the milk, cook and stir over low heat until thickened.
Add spinach and mix well.
If too thick, add more milk.

And that’s it! Simple but really tasty

Provencal gratin of spinach and zucchini

Provence (my most favorite part of the world) is known for it’s terracotta (baked earth) flower pots, urns, tiles and even cooking dishes. A “Tian”is a type of earthenware gratin dish which also gives it’s name to the food cooked in it.
They are generally vegetable oriented; and often rice grown in the Camargue (the marsh land of Provence) is added to the dish to make it more substantial.
This is an easy dish to double.

Serves 6 – 8

Ingredients
1 1/2lbs fresh spinach, washed
3 good sized zucchini, grated
4 oz short or medium grained rice
2 large onions, chopped
3 cloves garlic, chopped
2 tbsp olive oil
4 extra large whole eggs
1 cup whole milk
3/4 cup grated Parmigiano Reggiano cheese
2 tsps salt
freshly ground black  pepper
good pinch grated nutmeg

Assembly and Presentation
Preheat the oven to 375 degrees.

Oil a fairly large earthenware oven dish with a bit of olive oil.
In a saute pan cook the chopped onions and garlic until soft. Season with salt and pepper and add the grated zucchini and cook for an additional 10 minutes until the zucchini is wilted.

Blanch the spinach in boiling salted water for 2 minutes. Drain and refresh under cold water. Squeeze out the excess liquid and chop the spinach.
Put the rice in a pan of boiling salted water and simmer for 12 minutes. Drain.
Beat the eggs and gradually stir in the milk. Season with salt, pepper and nutmeg. Add the zucchini, spinach. rice and parmesan.

Pour into the gratin dish and bake for 30 minutes. Serve hot .
