Easy creamy prawn linguine

Creamy prawn linguine (linguine con gamberi) is the stuff pasta dreams are made of. Smothered in a creamy garlic sauce with lemon, this prawn and pasta recipe is ideal for date night or simply when you feel like a treat.

Serves 4

350 g (12 oz.) linguine
30 g (1 oz.) butter
250 g (9 oz.) shrimp
4-5 garlic cloves
100 ml (1/2 cup) dry white wine
1/2 tsp Italian herbs
1/4 tsp red chili flakes
200 ml (1 cup) double cream
2 tbsp creme fraiche
25 g (1 ounce) grated Parmesan
Juice of half a lemon
Freshly chopped flat-leaf parsley

Boil the linguine two minutes less than recommended on the package.
Meanwhile, melt the butter in a large pan, add the prawns and cook for five minutes until slightly brown.
Add the garlic and cook for a minute until fragrant.
Add the wine, herbs, and chili flakes and simmer for 5 minutes until the wine evaporates.
Stir in the double cream, creme fraiche, and parmesan, cook for another minute until all creamy and bubbly and stir the pasta in.
Season to taste, add the lemon juice and parsley and serve immediately.

Coconut Rice With Shrimp and Corn


This summery, one-pot dish has everything you need: fresh shrimp nestled in creamy coconut rice, with pops of summer corn and basil. Lime cuts through the richness and adds some bright tartness. To easily shave corn kernels off the cob, lay your cob flat on your cutting board. With a chef’s knife, lob off one side. Rotate the cob so that the flat side is on the cutting board and repeat, running around all four sides. Frozen wild shrimp is an excellent weeknight staple, as it thaws and cooks quickly. You can always keep it on hand and thaw just as much as you need, which ensures optimal freshness.

Serves 4

2 tbsp coconut oil
1 small yellow onion, finely chopped
2 tbsp peeled and finely chopped fresh ginger
1 small jalapeño, seeded and finely chopped
¾ tsp kosher salt, plus more to taste
1 ½ cups jasmine rice
1 (14-ounce) can full-fat coconut milk
1lb peeled and deveined large shrimp
1 ½ cups corn kernels, fresh (from 2 cobs) or frozen
1 lime, zested, then sliced into wedges
1 cup fresh basil leaves, torn, plus more for serving

In a large, heavy pot, heat coconut oil over medium. Add the onion, ginger and jalapeño and season with the 3/4 teaspoon salt. Cook, stirring, until the onion is soft and translucent, about 6 minutes.
Add the rice and sauté for another minute. Then stir in the coconut milk and 1 1/4 cups water. Bring to a simmer, reduce the heat to medium-low, cover, and cook for 10 minutes, adjusting the heat as needed to maintain a gentle simmer but avoid scorching.
Stir in the shrimp and corn, cover again, and cook, stirring occasionally, until the shrimp is cooked through and the rice is tender, 10 to 15 minutes. (Add more water by 1/2 cups throughout cooking as needed if the water has been absorbed, but the rice is still too firm.)
Remove from the heat and stir in the lime zest and basil; season to taste with salt. Serve immediately with lime wedges and topped with more basil.

Indian prawns with zucchini and coriander

This is a mild spiced Indian dish that comes together in no time. It uses both fresh cilantro and ground coriander which are actually from the same plant.
For the very best flavor, grind your coriander seeds rather than use the pre-ground coriander.

Serves 4
2 tbsp vegetable oil
3 medium zucchini, scrubbed and cut into 1/2″ chunks
1 medium onion, chopped
1 tbsp minced fresh ginger
1 jalapeno pepper, seeded and minced
2 garlic cloves, minced
1 1/2 tsp roasted ground coriander
1 1/2 tsp roasted ground cumin
1/2 tsp turmeric
3/4 tsp salt(Taste at the end and add more if needed)
1lb medium prawns, peeled and deveined
1/2 cup coconut cream (unsweetened)
3 tbsp fresh lemon juice
3 tbsp fresh cilantro, chopped
hot, cooked rice for serving

In a large (12 inch) nonstick skillet, heat the oil over a medium heat.
Add the zucchini, onion, ginger, Jalapeno and garlic.
Cook, stirring occasionally, until the onions are golden, 5 to 6 minutes.
Add the ground coriander, cumin, turmeric and salt.
Stir until the spices are fragrant, about 30 seconds.
Add the prawns. Cook until the prawns begins to turn opaque, about 1 minute.
Add the coconut cream and lemon juice and bring to the boil.
Cook until thickened, 1 to 2 minutes.
Stir in the cilantro and serve immediately with the rice

Sesame prawn toasts

I just love these and they’re much easier to make than you think.

8oz (200g) prawns, deveined, peeled and cleaned
1 clove garlic, roughly chopped
1 tsp fresh ginger, grated
1 egg white
½ tsp golden caster sugar (superfine)
1 tsp light soy sauce, plus extra to serve
2 scallions, very finely chopped
3 slices white sourdough bread, crusts removed
Sesame oil, for brushing
1 egg, lightly beaten
4oz (100g) sesame seeds
groundnut or sunflower oil for shallow frying

Put the prawns, garlic, ginger, egg white, sugar and soy in a food processor and blitz to a paste. Stir in the spring onion. Scrape into a bowl, cover and chill for 30 mins.

Brush one side of each piece of bread with sesame oil. Spread the prawn mixture on top, taking it right to the edges of the bread. Brush the beaten egg carefully over the top and sides and sprinkle liberally with sesame seeds so they stick all over.

Heat ½ inch to 1 inch (2-3cm) oil in a sauté pan or deep frying pan until hot, and cook each piece of bread (it’s easier to cook one at a time), unspread-side down for 1½ mins, then carefully turn over and cook for 1-2 mins on the prawn side or until the sesame seeds are golden and the prawn paste cooked through.

Cut each piece into four triangles. Serve with soy sauce (or a sweet & sour sauce) for dipping, if you like.

Asian shrimp and cabbage salad

An appealing combination of shrimp, carrots, cucumbers, peanuts and cilantro in a spicy Asian dressing makes this salad fresh-tasting and ever so slightly addictive.

Serves 6

1 pound medium shrimp, shelled and deveined
3 tbsp extra-virgin olive oil
1 1/2 tbsp Asian fish sauce
Finely grated zest and juice of 1 lime, plus lime wedges for serving
1 tbsp light brown sugar
1 tsp Thai red curry paste
1 small shallot, very finely chopped
1/2 small green cabbage, cored and finely shredded (6 packed cups)
2 carrots, julienned
2 Kirby cucumbers, very thinly sliced
1 cup unsalted roasted peanuts, coarsely chopped
1 cup cilantro leaves

Step 1
Bring a large pot of salted water to a boil and fill a bowl with ice water.
Add the shrimp to the boiling water and cook until pink and curled, about 1 minute.
Drain the shrimp and transfer them to the ice water to cool.
Drain and pat dry.

Step 2
In a large bowl, whisk the olive oil with the fish sauce, lime zest, lime juice, brown sugar, red curry paste and shallot.
Add the cabbage, carrots, cucumbers and shrimp and toss until evenly coated.
Let stand at room temperature for 20 minutes, until the cabbage is very slightly wilted.
Toss the salad, top with the peanuts and cilantro and serve with lime wedges.

The Asian dressing can be refrigerated overnight.
