Cornbread dressing with sausage and fennel

A lovely recipe adapted from Bon Appetite magazine.

Make this weeks ahead, freeze and bring out the day before you need it, to thaw slowly.

8 cups cornbread cubes (dried out)
1lb bulk Italian sweet sausage meat or chorizo
10 tbsp (1 1/4 sticks) butter
1 large fennel bulb, chopped, plus some fronds for serving
4 celery stalks, peeled and chopped
10 scallions, white and pale green parts only, thinly sliced
3 garlic cloves, finely chopped
2 Bosc or Comice pears, peeled and chopped
1/2 cup Sauvignon Blanc or other dry white wine
3 tbsp finely chopped Italian parsley
1 1/2 tbsp chopped fresh marjoram or oregano
1 1/2 tbsp chopped fresh thyme
1 tsp dried sage leaves
2 cups chicken broth
Kosher salt and freshly ground black pepper
3 extra large eggs, beaten to blend

Preheat oven to 300F
If you don’t buy the pre-bagged cornbread cubes, then divide your cornbread cubes between two baking sheets. Bake, tossing occasionally, until beginning to brown in spots, 40 to 45 minutes.

Meanwhile, cook the sausage meat in a large skillet over medium heat, breaking up with a spoon, until dark brown, 6 to 8 minutes.
Using a slotted spoon, transfer the sausage meat to a small bowl. Let cool

Reduce the heat to medium and heat 8 tbsp butter in the same skillet. Add the fennel, celery, scallions and garlic and cook, stirring often, until the vegetables are tender, about 15 minutes.
Add the pears and wine, increase the heat to medium high and cook, stirring occasionally, until the wine is almost completely evaporated, about 5 minutes.

Increase the oven temperature to 400 F.
Butter a 13 x 9 x 2 inch baking dish.
Combine sausage, fennel mixture, parsley, marjoram, thyme, sage and 1 1/2 cups broth in a large bowl.
Add the cornbread and toss to combine: season with salt and pepper and let sit for about 10 minutes, then add the remaining 1/2 cup of broth and toss, adding more broth if necessary. (The bread should be moist not soggy)
Add the eggs and mix gently just to combine.
Transfer the dressing to the prepared baking dish and dot with the remaining 2 tbsp butter.

Cover the dressing with foil and bake until heated through, about 30 minutes.
Remove the foil and bake until the dressing is golden and crisp on top, 20 to 30 minutes longer.
Serve topped with the fennel fronds.

Sweet chili roasted sausages and butternut squash

These all-in-one-pan roasts are divine and fast. Great for working people to throw together at the end of a hard day and you have a delicious meal. This dish is incredibly simple but just a little different because of the sweet chili sauce and cilantro.

Serves 4

8 good pork sausages (I use sweet Italian)
2 tbsp sweet chili sauce
1 small/medium butternut squash, peeled and chopped into 1 inch chunks
2 small red onions, peeled and quartered
12 cherry tomatoes
2 tbsp olive oil
1 small handful cilantro, leaves picked and chopped

Heat the oven to 400 F.

Put the sausages in a bowl with the sweet chili sauce and shake around until they are fully coated with the sauce. Tip them into a large roasting pan.

Toss the butternut squash and red onion in with the sausages.

Nestle the cherry tomatoes around the dish and then drizzle the lot with the olive oil.
Season with salt and pepper and roast for about 30 minutes, or until the sausages are golden brown and the vegetables tender.

Scatter with the chopped cilantro and serve in the center of the table with crusty bread to mop up the juices

Roasted sausages with grapes and chestnuts

Now Fall is coming, I think of roasted and baked dishes, especially this one with the woodsy flavor of the roasted chestnuts and sticky sweetness of the grapes along with the divine sausages. Some simple mashed potato would suffice here.

Serves 4

8 good quality pork sausages
7 oz cooked vacuum packed chestnuts
10 oz Portobello mushrooms, cut into thick chunks
9 oz sweet seedless grapes
1 large onion, cut into half moon shaped wedges
2 celery stalks, finely chopped
1 whole garlic bulb, all the cloves separated but not peeled
10 tbsp extra virgin olive oil
4 good sprigs rosemary
2 bay leaves
10 fl oz red wine
salt and pepper

Preheat the oven to 375 F

Put everything except the red wine into a broad, shallow ovenproof dish.
Turn the ingredients over so that they get coated in the olive oil. Using a wooden spoon, crush about half of the grapes so they release their juices into the pan.
Put into the oven and roast for 25 minutes.
Put in the red wine, mix well and cook for another 25 minutes or so. You can turn the sausages halfway through the cooking so they get colored on both sides.
The sausages and vegetables will cook and brown beautifully and the wine will reduce, leaving you with a gorgeous dark and bubbling dish.

Baked Italian sausages with potatoes and rosemary

Easy, satisfying and warming. You can also add some bite-sized pieces of chicken thigh to this recipe.

Serves 4

6 Italian sausages
1 1/2 lbs Yukon gold potatoes, scrubbed and sliced thick
1 1/2 tsp paprika
2 large rosemary stalks
6 unpeeled cloves garlic
sea salt
Freshly ground black pepper
2 thick slices Ciabatta bread
3 fl oz olive oil
1 handful Italian parsley

Preheat the oven to 400 F
Slice the sausages into 1 inch pieces and place in the roasting pan.
Add the potato slices, paprika, rosemary, garlic cloves, sea salt and pepper
Tear the ciabatta into bite sized pieces and add to the roasting tray
Drizzle the oil over everything, season well and gently toss to combine
Place in the oven and cook, stirring occasionally, for 30 to 40 minutes or until the potatoes are  tender and the sausages and bread are golden brown.
Top with the chopped Italian parsley and serve with a green salad

Pasta with spicy sausage, fresh basil and Dijon mustard

This is a Nigel Slater recipe which is fabulous, rich and unctious! I can feel the Southern Californian weather just start to nod towards Fall and that is my favorite season here.

This recipe is for 2 but you can easily double or treble it.

4 spicy Italian sausages
olive oil
4 handfuls (about 1/2 lb) of dried pasta. (any tube or shell shape that catches the sauce)
1 glass of white wine
dried chile flakes, a pinch or two
a small handful of chopped fresh basil, plus a few leaves for garnish
a tbsp of Dijon mustard, smooth or grainy
8 fl oz heavy cream

Put a large pan of water on to boil for the pasta.

Split the sausages open and take out the filling. Warm a little olive oil in a frying pan, just enough to lubricate the bottom.
Discard the sausage skin, crumble the meat into the hot pan and fry till sizzling and cooked through, about 5 minutes.

Salt the water generously and add the pasta.

Pour the wine into the sausage pan and let it bubble a little, scraping up all the sticky sausage goo on the bottom of the pan. Stir in the chile flakes, season and add the chopped basil.
Add the mustard and pour in the cream and bring slowly to a simmer. Cook for a minutes or two, stirring now and again.

When the pasta is tender, about 9 minutes after coming to a boil, drain and tip into the creamy sausage sauce.
Serve piping hot garnished with a few sprigs of fresh basil

Italian sausage and gorgonzola stuffed baby Portabella mushrooms

Don’t say I didn’t warn you!  Anything to do with Italian sausage with that gorgeous fennel flavor has me, and the addition of Gorgonzola  (or St Agur Blue cheese) is just incredible.

Serves 10 to 16 people as an hors d’oeuvres

Preheat the oven to 350 F

1lb sweet Italian sausage
2 large garlic cloves, crushed
1/2 cup mascarpone cheese
3/4 cup Italian seasoned breadcrumbs
1 & 1/4 cups Mountain Gorgonzola (the creamy one) You can use a little less if preferred, but I like my flavors bold!
32 baby Portabello (Crimini) mushrooms
salt and pepper
a good handful fresh basil, shredded

Cook the sausage meat in a skillet, crumbling it with a fork until the pink is all gone.
While it’s cooking, take the stems out of the mushrooms and chop up the stems.
Add the crushed garlic and mushrooms stems to the sausage and cook for 1 minute and turn the heat to low.
Add the mascarpone cheese, breadcrumbs,  gorgonzola ad shredded basil.
Season with the salt and pepper to taste.

Stuff the mushrooms with the cooked filling and line up on a lined baking sheet.

Bake in  a preheated 350F  for about 20 to 25 minutes

There will most likely be filling left. you can eat it on bread or crackers!

Sausages with oregano, mushrooms and olives

I am a self-confessed sausage freak and although this is really simple, it is packed with flavor

Serves 4

1lb your favorite sausages
1 tbsp olive oil
1 tbsp dried oregano
3 garlic cloves, slices
400g can chopped tomatoes or cherry tomatoes
7 fl oz beef stock
4 oz pitted Kalamata olives
1lb mushrooms, thickly sliced

Using kitchen scissors, snip the sausages into meatball sized pieces.
Heat a large pan and fry the sausage pieces on medium low heat in the oil for about 5 – 10 mins until golden all over.

Add the oregano and garlic, fry for 1 minute more, then tip in the tomatoes, stock, olives and mushrooms.

Simmer for 15 minutes until the sausages are cooked through and the sauce has reduced a little.
Serve with mashed potatoes or pasta

Butternut squash bread pudding

Gorgeous!!      Serves 4 -6

Preheat oven to 375 F

3 cups butternut squash, cut into 1 inch cubes
2 tbsp olive oil
salt and pepper
ground or dried sage
4 cups sturdy, day old French or Italian bread, cut into large cubes
2 tbsp butter
2 tbsp olive oil
3/4 cup minced shallots
3 garlic cloves
1/2 lb sweet Italian or spicy Italian pork sausage
1/2lb sliced mushrooms
1&1/2 cups kale, chopped
1 cup half and half
2 cups whole milk
4 large eggs
3/4 cup freshly grated parmesan cheese
1 to 1&1/2 cups shredded mozzarella or fontina cheese

Cut the squash into 1 inch cubes. Oil a cookie sheet and toss the squash in the olive oil. Season with the salt, pepper and dried or ground sage. Bake at 375 F  for 40 to 45 mins.

Cut the bread into large cubes and put in the oven for about 5 minutes while the squash is cooking.
Remove to a large bowl.

Meanwhile saute the minced shallot in the olive oil and butter until wilted.
Add the minced garlic and saute briefly until soft then add the mushrooms and cook them through.
When the mushrooms are browned and nearly done cooking, add the chopped kale and saute for a few minutes. If necessary, add a little more oil. Season all with salt and pepper then remove from the pan and place all the cooked vegetables in the bowl with the cooked bread.

Use the same pan to cook the sausage. Remove the casings from the sausages, break up the meat in the pan and cook through. Add a little more olive oil if there’s not enough in the pan, to keep the meat from sticking.
Add the cooked sausage to the bowl with the vegetables, along with the squash when it’s cooked through.

Whisk the eggs, in another bowl and add the half and half, then the milk and stir in the cheeses.
Pour the mixture into the large bowl with the bread/vegetable/sausage mixture and mix it all together with a wooden spoon.
Let it sit for at least 15 mins in order for the bread to soak up the liquid.
You can also make the recipe to this stage and refrigerate overnight letting the bread soak well in the juices.
Pour it into a greased 9 x 13 inch casserole dish and bake at 375 F for 35 to 40 minutes.
You can turn on the broiler to get it a little more browned near the ned of the cooking.

This recipe also reheats really well for leftovers!

A traybake of roasted Italian sausages, potatoes, ciabatta and rosemary

This is one of those traybake-style dishes that you can really add what you like to, as long as you toss it all in the olive oil and seasonings so that everything is well coated in order to caramelize beautifully! Make sure the pieces are roughly all the same size so that it cooks evenly. The whole family will love it and all you need is a big salad to accompany.

Serves 4

6 Sweet or spicy Italian sausages
1 1/2 tsp paprika
4 long rosemary stalks
smallish-sized potatoes, halved
8 garlic cloves, unpeeled
About 12 to 16 cherry tomatoes
sea salt and freshly ground black pepper
2 or 3 thick slices of good ciabatta bread
plenty of fruity olive oil
1 large handful Italian parsley

Preheat the oven to 400 F
Slice the sausages into 1 1/2 inch pieces and place in the roasting pan.
Add the potatoes, tomatoes, paprika, rosemary, garlic cloves, sea salt and black pepper
Tear the ciabatta into bite-sized pieces and add to the roasting tray
Drizzle over about 1/4 cup olive oil, season and gently toss to combine.
Place in the oven and cook, stirring occasionally for 40 mins or until the potatoes are tender and the sausages and bread are golden brown.
When ready to serve, top with the chopped Italian parsley and serve.

NB   Mushrooms, halved are also nice in it

Breakfast Strata

Another gorgeous and easy breakfast/brunch dish.

Serves 4 to 6 people

6 slices of a good dense Italian loaf cut 3/4 inch thick
1lb Sweet (or spicy) Italian sausage meat
1 tsp Dijon mustard (or less of English Colmans if you can take the heat)
1 heaped cup grated or shredded strong cheddar cheese. it’s always better if you buy it whole and mature then do it yourself
4 extra large (or large)  eggs, slightly beaten
1 1/2 cups whole milk
3/4 cup half and half
1/2 tsp salt
1/4 tsp ground pepper
dash of freshly grated nutmeg
1 tsp Worcester sauce

Trim the crusts from the bread and fit it all into the bottom of a  10 by 16 inch baking pan.
Brown the sausage meat, using a fork and press down forcing the lumps to disappear until it’s crumbly and drain off any excess fat. Stir the mustard into the sausage meat.
Spoon the cooked sausage meat evenly over the bread and sprinkle evenly with the grated cheese.
Combine the remaining ingredients in a bowl (eggs, milk, half and half, salt, pepper, nutmeg and Worcester sauce) then pour the mixture over the cheese and sausage mixture.
Bake at 350F for 25 to 30 minutes until hot, bubbly and set.
Note
 This can be made the day before and kept in the refrigerator. Allow extra time for bakiong if it’s been refrigerated
