Asian shredded salad

Serves 4

2 tsp sunflower oil
1/2 tsp toasted sesame oil
1 tbsp plus 2 tsp runny honey
Fine grain sea salt, to taste
One small bunch of cilantro (leaves and stems), chopped
1/2 cup peanuts, toasted
1 bunch of scallions, shredded
2 cups finely shredded cabbage, (a mix of green and purple is nice too)
1/2 cup mung bean sprouts
1/2 cup broccoli or pea sprouts
3 large stalks celery, thinly sliced on diagonal
2 tbsp shoyu or soy sauce
1 tbsp (brown) rice vinegar
toasted sesame seeds, black or white

In a medium bowl, stir together the sunflower oil, sesame oil, 1 tablespoon of the honey, and a generous pinch of sea salt. Add the cilantro, peanuts, and scallions. Stir well to combine. Set aside.

In a separate bowl, combine the cabbage, mung bean sprouts, broccoli or pea sprouts, and celery.

In another bowl, stir together the soy sauce, rice vinegar, and remaining 2 teaspoons of honey. Stir to combine, pour over the vegetables, and toss to coat. Add half the cilantro-peanut mixture, toss again, and transfer to a serving dish.
Top with the remaining cilantro relish and a sprinkling of sesame seeds.

Stir-Fried Udon Noodles With Pork and Scallions

Recipe from Bon Appetite Magazine

With chewy noodles, well-browned ground pork, and crunchy cabbage, this take on yaki udon (stir-fried udon noodles) gets its flavor from an umami-rich punch of soy sauce and mirin, a sweet Japanese rice wine. (You might recognize the combination from teriyaki recipes.) It also has green onions for a fresh bite and a drizzle of sesame oil for nutty depth. You can easily make it vegetarian: Simply omit the pork and sub in 8 oz. shiitake or crimini mushrooms instead.

If you don’t have mirin in your pantry already, it’s easily found in many larger grocery stores, East Asian markets, and online. Some brands may be labeled “aji-mirin.” This common product is an imitation of true mirin (the name translates to “tastes like mirin”). Whatever you find will be delicious in this recipe, but if you spot hon-mirin (a.k.a. true mirin, which is quite a bit more expensive) it makes the dish even more special.

Serves 4

2 tbsp avocado or vegetable oil, divided
4 cups very coarsely chopped green cabbage (from about ¼ medium head)
2 7-oz packages instant udon noodles, flavor packets discarded
2 tsp toasted sesame oil
8 oz ground pork
5 scallions, white and pale-green parts coarsely chopped, dark-green parts thinly sliced
2 tsp finely grated fresh ginger (from a 1-inch knob)
1 tsp crushed red pepper flakes
⅓ cup mirin
⅓ cup soy sauce
1 tbsp toasted sesame seeds, plus more for serving

Step 1

Heat 1 Tbsp. vegetable oil in a large skillet over medium-high. Add cabbage and cook, tossing often, until edges are browned, about 4 minutes. Reduce heat to low and continue to cook, tossing often, until thickest parts of cabbage leaves are tender, about 4 minutes longer. Remove from heat and set skillet aside.

Step 2

Place udon in a large heatproof bowl (or pot if you don’t have one) and cover with 6 cups boiling water. Let sit 1 minute, stirring to break up noodles, then drain in a colander. Transfer noodles back to bowl and toss with sesame oil. Transfer cabbage to bowl with noodles. Wipe out skillet.

Step 3

Heat remaining 1 Tbsp. vegetable oil in same skillet over medium-high and add pork, breaking up and spreading across surface of pan with a spatula or tongs. Cook pork, undisturbed, until underside is brown, about 3 minutes. The pork will never brown if you’re fussing with it the whole time, so when we say “undisturbed,” that means keep your paws off it and let the heat of the pan and the pork do their thing. When pork is browned, break up meat into small bits. Cook, tossing, just until there’s no more pink, about 1 minute.
Add chopped scallions (the pale parts), ginger, and red pepper. Continue to cook, tossing often, until scallions are softened and bottom of skillet has started to brown, about 1 minute. Add udon mixture, mirin, and soy sauce and cook, tossing constantly, until noodles are coated in sauce (be sure to scrape bottom of skillet to dissolve any browned bits), about 45 seconds. Remove from heat and fold in 1 Tbsp. sesame seeds and dark-green parts of scallions.
Top with more sesame seeds before serving.

Rumbledethumps, the ultimate Scottish vegetarian comfort food.

Similar to bubble and squeak, Rumbledethumps is a traditional Scottish dish of buttery mash, cabbage and rutabaga (swede), baked until golden brown and crispy.
You can cook it earlier in the day and reheat in the oven – give them an extra 20 minutes or so from cold.

Serves 6

1 1/2 lb large potatoes, peeled and chopped into large chunks
14 oz rutagaba (swede) peeled and chopped into large chunks
3-4 oz unsalted butter
9 oz savoy cabbage or kale, finely sliced
salt and freshly ground black pepper
3-4 oz mature cheddar, grated

Set the oven to 350F.

Cook the potatoes and swede in a saucepan of salted boiling water until tender. Drain well and return to the pan.

Heat 50g/2oz butter in a pan and gently cook the cabbage for a few minutes, until the cabbage is tender but retains its color.

Add the cabbage to the pan with the potatoes and swede. Add the remaining 25g/1oz butter and mash together using a potato masher. Season, to taste, with salt and freshly ground black pepper.

Place the mashed vegetables into an ovenproof lidded dish and top with the cheese. Cover with a lid and bake in the oven for about 30 minutes, then remove the lid and continue to cook for a further 15 minutes, or until piping hot and golden-brown on top.

Stir-fried cabbage and bean sprouts with ginger sauce

I made this last night and besides being vegan, it was delicious and the sauce is really special. You could make the sauce a day ahead and it would also be great thrown around hot udon noodles.
Once you’ve prepped the vegetables and made the sauce, it take about 8 minutes to throw together

Serves 4

For the sauce
2 oz fresh ginger root, peeled and thinly sliced against the grain
6 tbsp good quality soy sauce
6 tbsp mirin
4 tbsp sake
1 tbsp Ketchup
1 tbsp sesame oil
1 tbsp cornflour (cornstarch)

For the vegetables
1 tbsp vegetable oil
1 large onion, finely sliced
1 medium-sized cabbage (hispi cabbage if you can find one) halved, cored and cut into 1/2″ wide strips
12 oz bean sprouts
4 scallions, finely sliced, to garnish
toasted white sesame seeds, to garnish
cooked rice or udon noodles to serve with

Pure in a food processor or blender, the ginger, soy sauce, mirin, sake, ketchup, sesame oil and cornflour.

Heat the oil in a wok or good sized frying pan over high heat and add the onion and cabbage.
Stir-fry for 4-5 minutes then add the beansprouts and ginger sauce.
Keep stir-frying until the sprouts have softened sightly and the sauce has coated everything nicely- 3-4 minutes
Garnish with the scallions, sesame seeds and serve with rice or noodles

Cod with chorizo and white beans

Chorizo and red peppers give this cod dish a nice Spanish flavor. This is a really easy way of cooking fish and there’s plenty of delicious veg to go with it.
A lovely recipe from “The Hairy Bikers”.

Serves 4
1 tbsp olive oil
6oz (150g) cooking chorizo, thinly sliced
1 red onion, thinly sliced1 red pepper
9oz (250g) white cabbage, shredded
3 garlic cloves, finely chopped
1 tsp dried thyme
7 fl oz (200ml) red wine
2 tbsp tomato purée
14oz (400g) can of white beans (preferably cannellini), drained and rinsed
4 filets of cod or other thick white fish, skinned
salt and black pepper

Heat the olive oil in a large sauté pan or frying pan with a lid. Add the chorizo and brown it quickly on all sides, then remove it with a slotted spoon. If there’s a lot of fat in the pan, spoon off all but about 2 tablespoons.

Add the red onion, red pepper and cabbage and cook them over a medium heat until they have started to soften, then add the garlic and thyme. Cook for a further 2–3 minutes, then turn up the heat and pour in the wine. Leave it to bubble and reduce for a couple of minutes, then stir in the tomato purée, beans and about 250ml of water. Season with salt and pepper.

Cover the pan and leave to simmer until the vegetables are just tender. Put the chorizo back in the pan. Season the cod steaks with salt and pepper and place them on top of the beans and veg. Cover the pan and leave to steam very gently for about 15 minutes or until the cod has just cooked through.

Serve sprinkled with parsley, if using, with lemon wedges on the side for squeezing over.

Roast pork tenderloin with stir-fry cabbage and spiced figs

This is so lovely with the spiced cabbage and red onion stir-fry.

Serves 3

1lb pork tenderloin, silver-skin removed
3 tbsp olive oil
1 large red onion
1 heaped tsp cumin seeds ( love to roast my cumin before using)
1 heaped tsp coriander seeds
8 green cardamom pods
3/4 lb cabbage leaves
6-8 fresh figs
6 tbsp white vermouth

Make sure the tenderloin is dry to the touch, patting it with kitchen paper if not, then season generously with salt and black pepper.
Warm the olive oil in a roasting tin over a moderate to high heat then add the pork and brown lightly, turning it from time to time so all sides color to an even toasty brown. About 6 or 7 minutes.
Remove the roasting tin from the heat, lift out the pork and leave to rest under a large upturned bowl or a piece of foil.

Peel and thinly slice the red onion. Place the roasting tin over a moderate heat, add the onion to the fat and oil already in the tin, then leave to cook over a moderate heat, with an occasional stir, for 15-20 minutes, until soft and sweet.

Put the cumin and coriander seeds in a mortar. Crack the cardamom pods, extract the tiny brown seeds from within and add them to the spices. Pound to a coarse powder with a pestle. (A spice mill will do it even more quickly.)
Stir the ground spices into the onion and continue cooking.

Wash and dry the cabbage leaves, then stack one on top of another and roll them up. Now shred them into ribbons about 1/8 ” thick. Stir the cabbage into the onion, tossing well with 2 spoons or a pair of tongs, to mix everything thoroughly.

Slice the pork into 1″ (3cm) thick pieces.
Cut the figs into quarters, depending on their size.
As soon as the cabbage has wilted – about 2 minutes – remove the mix to a warm serving dish and cover.
Pour the white vermouth into the pan and let it bubble furiously for 30 seconds, then return the slices of pork and their resting juices, along with the figs, to the pan and continue cooking for 3-4 minutes.
Spoon the meat, figs and juices over the cabbage and onions and serve.

Cheesy Cabbage Gratin

Cabbage is the new hot vegetable for 2020!
Everyone who claimed this cheesy gratin would be “too much!” ended up going back for seconds and thirds. I think you’ll do the same.

1 medium head of green or savoy cabbage (about 3½ lb. total), cut through core into 8 wedges
2 Tbsp. extra-virgin olive oil
1½ tsp. kosher salt, plus more
1 tsp. freshly ground black pepper, plus more
2 medium shallots, quartered through root end
4 garlic cloves
2 cups heavy cream
1 Tbsp. thyme leaves, plus more for serving
1 Tbsp. unsalted butter
3 oz. Gruyère, grated (about 1½ cups)
½ oz. Parmesan, finely grated (about ½ cup

Place oven racks in upper third and middle of oven; preheat to 350°. Place cabbage on a rimmed baking sheet and drizzle with oil; season lightly with salt and pepper. Roast until tender and edges are golden, 40–45 minutes. (This is an essential first step: It draws out the excess moisture, ensuring that the cream mixture doesn’t get watery.)

Meanwhile, bring shallots, garlic, cream, 1 Tbsp. thyme, 1½ tsp. salt, and 1 tsp. pepper to a simmer in a small saucepan over low heat. Cook, stirring occasionally, until shallots and garlic are very soft, 15–20 minutes. Let cool slightly. Transfer to a blender; blend until smooth.

Rub the inside of a 3-qt. shallow baking dish with butter. Arrange cabbage in dish so wedges are lying on a cut side; pour cream mixture over. Bake on middle rack, uncovered, until cream thickens, 30–40 minutes. Let cool 30 minutes.

Heat broiler. Sprinkle Gruyère and Parmesan evenly over cabbage. Broil until cheese is bubbling and gratin is deeply browned, about 4 minutes. Top with more thyme.

Do Ahead: Gratin (without cheese) can be baked 1 day ahead. Cover and chill. Bring to room temperature before sprinkling with cheese and broiling.

Asian shrimp and cabbage salad

An appealing combination of shrimp, carrots, cucumbers, peanuts and cilantro in a spicy Asian dressing makes this salad fresh-tasting and ever so slightly addictive.

Serves 6

1 pound medium shrimp, shelled and deveined
3 tbsp extra-virgin olive oil
1 1/2 tbsp Asian fish sauce
Finely grated zest and juice of 1 lime, plus lime wedges for serving
1 tbsp light brown sugar
1 tsp Thai red curry paste
1 small shallot, very finely chopped
1/2 small green cabbage, cored and finely shredded (6 packed cups)
2 carrots, julienned
2 Kirby cucumbers, very thinly sliced
1 cup unsalted roasted peanuts, coarsely chopped
1 cup cilantro leaves

Step 1
Bring a large pot of salted water to a boil and fill a bowl with ice water.
Add the shrimp to the boiling water and cook until pink and curled, about 1 minute.
Drain the shrimp and transfer them to the ice water to cool.
Drain and pat dry.

Step 2
In a large bowl, whisk the olive oil with the fish sauce, lime zest, lime juice, brown sugar, red curry paste and shallot.
Add the cabbage, carrots, cucumbers and shrimp and toss until evenly coated.
Let stand at room temperature for 20 minutes, until the cabbage is very slightly wilted.
Toss the salad, top with the peanuts and cilantro and serve with lime wedges.

The Asian dressing can be refrigerated overnight.

Mediterranean roasted cabbage steaks with basil pesto and feta.

Serves 3

1 small head cabbage, sliced into “steaks”
4 oz basil pesto
1 cup shredded parmesan cheese
2 oz feta cheese, crumbled
2 small tomatoes, sliced
5-6 marinated artichoke halves
1 tbsp mediterranean Seasoning
Fresh basil, to garnish

OPTIONAL TOPPINGS include olives, mozzarella, mushrooms, roasted red pepper, etc.

Heat the oven to 400F and spray a large sheet pan with nonstick spray.
Arrange the cabbage steaks in a single layer on the sheet pan so the edges are all touching. Slather pesto on the steak halves and be generous as a lot will melt into the cabbage folds.
Top with cheese and tomato and bake until the edges of the cabbage are crisp and all of the cheese is bubbly, about 20 minutes.
Sprinkle with seasoning and fresh basil.
Serve hot with an extra scoop of Pesto for dipping!

Sausage and cabbage skillet

A super-easy Paleo/Whole 3o friendly recipe from the blog “Real, Simple, Good”.
I happen to adore sausages and if you’re doing the Whole 30, just make sure you have W30-compliant sausages. (No added gluten or sugar)

Serves 4

4 large sausage links or bratwurst, uncooked (check ingredients for Paleo/Whole30 compliance.
8 pieces bacon, diced
1 onion, diced
1 bell pepper, diced
4 cloves garlic, minced
8 cups shredded cabbage (pre-bagged mix with carrots, etc. is ok)
2 tbsp apple cider vinegar
2 tbsp spicy brown mustard
1 tsp smoked paprika
1/2 tsp sea salt
1/2 tsp ground pepper

(Skip this step if you’re using pre-cooked sausages)
Add enough water to submerge the sausages to a medium pot. Bring the water to a boil and then turn it down to a gentle simmer. Add sausages to the water and boil for 15 minutes.

Prep the bacon, onion, bell pepper, garlic and cabbage as noted.
In the pan over medium heat add the bacon to cook. Cook, stirring occasionally until the bacon is just getting crispy, about 7-8 minutes. Remove bacon and set aside on a plate.

(Also skip this step if you’re using pre-cooked sausages)
When the sausages are done, remove the sausages and pat them dry with a paper towel.

In the same pan as you cooked the bacon in over medium heat, add in the sausages. Cook sausages to brown on the sides, 3-4 minutes per side. Remove sausages and place on the plate with the bacon.

Add in the onion, bell pepper and garlic to the same pan. Scrape up any brown bits from the bottom of the pan and cook for 4-5 minutes, stirring frequently, until the onions and peppers start to soften.

Add the shredded cabbage/slaw mix to the pan. Cook and stir frequently, until everything is combined and slaw is wilted, about 3-4 minutes. Turn down heat to low.

Add in the mustard, apple cider vinegar, paprika, salt and pepper. Stir to mix.
Finally, add the sausages and bacon back to the pan, stirring everything to mix. Serve and enjoy.
